1/2 tsp ground black pepper
1 tbsp cooking oil
1 tsp minced garlic
1 tsp minced shallots
1 tbsp caramelized sauce (for color)
200ml fresh coconut water (optional, enhances flavor)
Instructions:
Prepare the Ingredients:
Rinse the pork ribs and cut them into bite-sized pieces.
Blanch the ribs in boiling water for a few minutes to remove impurities, then rinse with clean water.
Boil quail eggs, peel the shells, and set aside.
Marinate the Ribs:
Marinate the ribs with fish sauce, sugar, seasoning powder, salt, black pepper, minced garlic, and minced shallots for 20 minutes.
Cook the Ribs:
Heat oil in a pot, sauté garlic until fragrant.
Add the marinated ribs and stir-fry until slightly browned.
Pour in caramelized sauce for an appealing golden-brown color.
Add fresh coconut water (or water) until the ribs are just submerged. Simmer over low heat for 20 minutes.
Add Quail Eggs:
Add the quail eggs to the pot, gently stir to coat them in the sauce.
Continue braising on low heat for another 10 minutes until the sauce thickens.
Serve:

Serve hot with steamed rice and fresh cucumber slices.
Tips:
✔ Using fresh coconut water enhances the sweetness and aroma of the dish.
✔ Slow cooking allows the ribs to absorb more flavor.
✔ Add chili for a spicy kick if desired.
