Braised Chicken with Lemongrass & Chili – Spicy, Aromatic, and Delicious

Braised chicken with lemongrass and chili is a flavorful dish with a perfect balance of spice, aroma, and savory goodness. It pairs perfectly with hot steamed rice.
Ingredients:

500g chicken (drumsticks, wings, or chopped free-range chicken)
3 stalks of lemongrass (finely chopped)
2 chili peppers (chopped or whole, depending on spice preference)
2 tbsp fish sauce
1 tbsp sugar
1 tsp seasoning powder
1/2 tsp salt
1/2 tsp ground black pepper
1 tbsp cooking oil
1 tsp minced garlic
1 tsp minced shallots

Instructions:

Marinate the Chicken:
Wash and drain the chicken.
Marinate with fish sauce, sugar, seasoning powder, salt, pepper, minced garlic, minced shallots, and chopped lemongrass. Let it sit for 20 minutes to absorb the flavors.

Cook the Chicken:
Heat oil in a pan, add the remaining lemongrass and garlic, and stir-fry until fragrant.
Add the marinated chicken and stir-fry until the meat is slightly browned and absorbs the seasoning.
Add chopped chili and continue stirring.
Pour in a little water, cover with a lid, and simmer on low heat for 15-20 minutes until the chicken is tender and the sauce thickens.

Serve:
Turn off the heat, sprinkle some black pepper for extra aroma.
Serve hot with steamed rice and fresh vegetables.

Tips:
