00:08 If you're looking for a special birthday cake for your little fairy princess,
00:11 I think I have a great idea for you.
00:13 It's a princess cake, and as you'll see, the cake forms a beautiful gown over a doll.
00:18 Let's get started.
00:20 We're going to need three 8-inch round cakes,
00:23 and one cake that we've baked in an ovenproof glass bowl like this.
00:27 I'm going to push this over to the side, and we're going to start cutting.
00:29 I've already trimmed the dome off of one cake and inverted it onto our cake platter.
00:34 I'm going to cut the dome off of this one using a serrated knife.
00:41 And you can just set this aside. If you want a snack on it, you can.
00:45 Now I'm going to cut this one in half also.
00:52 Rotate the cake as you go instead of cutting straight through.
00:57 A little tip is to chill your cakes in the freezer for about 45 minutes before you cut them.
01:01 This will reduce the crumbs.
01:04 What I'm going to do now is I'm going to cut a small circle in the center of each cake.
01:08 This way we can insert the doll in later.
01:11 You can either use a small serrated knife, but you can also use little decorative pastry cutters.
01:16 Cut it right in the middle.
01:25 One trick to keep a nice clean edge on your decorating surface is to use little pieces of parchment paper,
01:30 and you can tuck them under the cake.
01:35 I've pre-tinted some of our frosting pink just using food coloring that you find in the grocery store.
01:41 I'm going to take a nice size dollop and place it right on.
01:45 Then I'm going to take my offset spatula and spread it evenly over the entire surface.
01:53 Then we take another cake and invert it right on top.
01:57 Try to keep them as centered as possible.
02:05 And then the top.
02:07 It's time to do a crumb coat.
02:08 A crumb coat is basically just a thin layer of frosting that covers the entire cake,
02:12 and it seals in the crumbs so that your final coat looks nice and clean.
02:17 It looks like this one's completely covered, so I'm going to go ahead and show you a nice trick.
02:21 You can actually keep spreading the frosting over with your offset spatula,
02:25 but a nice way to get it really smooth is just use a piece of paper.
02:29 Cup the paper like this, curve it to the side of the cake, and pull straight up.
02:36 You get a nice smooth edge.
02:40 Continue around the entire cake.
02:51 Okay, the sides look really smooth.
02:53 I'm just going to take the inside and spread it smooth also.
02:56 It doesn't matter how that's going to look because it's going to get filled in later.
03:01 Now that I've finished my crumb coat, I'm going to remove the pieces of parchment paper.
03:05 Just tie them right out.
03:10 If there's still a little bit of a messy edge, just come back with your offset spatula and smooth it over.
03:17 Now that our crumb coat is done, I'm going to put it in the freezer for about 45 minutes to set up
03:21 before we finish frosting it.
03:23 I have one already set, so let me go get it.
03:30 It's time to do our final coat, and for this one, we've placed it on a really nice serving platter
03:34 with a little ribbon to match.
03:38 Place a nice-sized dollop on top and start spreading it on.
03:46 You can actually turn a pedestal like this to make it easier to frost the cake.
04:02 Okay, it's all covered.
04:03 Now you have a few choices.
04:05 You can go ahead and make it smooth again with that same technique we did with the crumb coat and the paper,
04:09 or you can give it a little texture.
04:11 You can do lines up and down.
04:14 I think I'm going to give it some little swirls.
04:17 Just take your spatula, press it into the frosting, and spin it and lift up.
04:24 It sort of looks like billowing fabric.
04:30 There's really no pattern to this.
04:31 It's all random movements.
04:36 And I think we're ready.
04:38 Now that we're done frosting the cake, it's time to insert the doll.
04:41 We've taken a fashion doll, and we've just basically wrapped it with some plastic wrap.
04:46 This will protect the clothing so it doesn't get any frosting on it.
04:50 I have one ready, and we're just going to stick her right in there.
04:54 Then we're just going to cover with a little bit more frosting to fill in that hole.
05:06 If your fashion doll has long hair, you might consider wrapping it in plastic wrap also so it doesn't get frosting on it.
05:15 The next step is we're going to pipe a decorative pattern on the bodice using the pink frosting.
05:21 Always squeeze a little bit of the frosting out into your bowl beforehand in case there's any air pockets.
05:27 Squeeze and hold in place, and then pull out as you release pressure, and you'll get a nice little rosette or star.
05:33 Continue around the entire bodice.
05:39 I'm going to put some straps over her shoulders.
05:48 Now we can add some candy highlights.
05:50 I have these little stars, which will be perfect for a fairy princess.
05:54 You can put them in little clusters of three.
05:59 I'm going to put one more star that's a little bit larger right on her bodice.
06:05 Maybe I'll put two more little stars right next to it.
06:13 And now for the crowning touch, you can make a wand and a hat for your fairy princess.
06:21 I love to use a real doll for this cake so that the birthday girl can keep it as an extra special memory.
