00:00 Hi, I'm Leigh Hanson for Betty Crocker Kitchens.
00:11 If you're looking for a special birthday cake for your little fairy princess, I think I
00:15 have a great idea for you.
00:17 It's a princess cake.
00:18 And as you'll see, the cake forms a beautiful gown over a doll.
00:22 Let's get started.
00:23 We're going to need three 8-inch round cakes and one cake that we've baked in an oven-proof
00:28 glass bowl like this.
00:30 I'm going to push this over to the side and we're going to start cutting.
00:32 I've already trimmed the dome off of one cake and inverted it onto our cake platter.
00:37 I'm going to cut the dome off of this one using a serrated knife.
00:44 And you can just set this aside.
00:45 If you want a snack on it, you can.
00:48 Now I'm going to cut this one in half also.
00:55 Invert the cake as you go instead of cutting straight through.
01:00 One tip is to chill your cakes in the freezer for about 45 minutes before you cut them.
01:04 This will reduce the crumbs.
01:07 What I'm going to do now is I'm going to cut a small circle in the center of each cake.
01:11 This way we can insert the doll in later.
01:14 You can either use a small serrated knife, but you can also use little decorative pastry
01:19 cutters.
01:20 I'm going to cut it right in the middle.
01:28 One trick to keep a nice clean edge on your decorating surface is to use little pieces
01:32 of parchment paper and you can tuck them under the cake.
01:38 I've pre-tinted some of our frosting pink just using food coloring that you find in
01:42 the grocery store.
01:43 I'm going to take a nice size dollop and place it right on.
01:47 Then I'm going to take my offset spatula and spread it evenly over the entire surface.
01:56 Then we take another cake and invert it right on top.
02:00 Try to keep them as centered as possible.
02:08 And then the top.
02:09 Okay, it's time to do a crumb coat.
02:11 A crumb coat is basically just a thin layer of frosting that covers the entire cake and
02:15 it seals in the crumbs so that your final coat looks nice and clean.
02:20 Looks like this one's completely covered, so I'm going to go ahead and show you a nice
02:23 trick.
02:24 You can actually keep spreading the frosting over with your offset spatula, but a nice
02:28 way to get it really smooth is just to use a piece of paper.
02:32 Cup the paper like this, curve it to the side of the cake, and pull straight up.
02:39 You get a nice smooth edge.
02:43 Continue around the entire cake.
02:49 Okay, the sides look really smooth.
02:56 I'm just going to take the inside and spread it smooth also.
02:59 It doesn't matter how that's going to look because it's going to get filled in later.
03:04 Now that I've finished my crumb coat, I'm going to remove the pieces of parchment paper.
03:08 Just slide them right out.
03:13 If there's still a little bit of a messy edge, just come back with your offset spatula and
03:17 smooth it over.
03:20 Now that our crumb coat is done, I'm going to put it in the freezer for about 45 minutes
03:24 to set up before we finish frosting it.
03:26 I have one already set, so let me go get it.
03:30 It's time to do our final coat.
03:35 For this one, we've placed it on a really nice serving platter with a little ribbon
03:38 to match.
03:42 Place a nice-sized dollop on top and start spreading it on.
03:49 You can actually turn a pedestal like this to make it easier to frost the cake.
03:57 Okay, it's all covered.
04:06 Now you have a few choices.
04:08 You can go ahead and make it smooth again with that same technique we did with the crumb
04:11 coat and the paper, or you can give it a little texture.
04:15 You can do lines up and down.
04:17 I think I'm going to give it some little swirls.
04:21 Just take your spatula, press it into the frosting, and spin it and lift up.
04:27 It sort of looks like billowing fabric.
04:33 There's really no pattern to this.
04:34 It's all random movements.
04:39 I think we're ready.
04:41 Now that we're done frosting the cake, it's time to insert the doll.
04:44 We've taken a fashion doll and we've just basically wrapped it with some plastic wrap.
04:50 This will protect the clothing so it doesn't get any frosting on it.
04:53 I have one ready and we're just going to stick her right in there.
04:58 Then we're just going to cover with a little bit more frosting to fill in that hole.
05:10 If your fashion doll has long hair, you might consider wrapping it in plastic wrap also
05:13 so it doesn't get frosting on it.
05:18 The next step is we're going to pipe a decorative pattern on the bodice using the pink frosting.
05:24 Always squeeze a little bit of the frosting out into your bowl beforehand in case there's
05:27 any air pockets.
05:31 Squeeze and hold in place and then pull out as you release pressure and you'll get a nice
05:34 little rosette or star.
05:37 Continue around the entire bodice.
05:42 I'm going to put some straps over her shoulders.
05:51 Now we can add some candy highlights.
05:53 I have these little stars which will be perfect for a fairy princess.
05:56 You can put them in little clusters of three.
05:59 I'm going to put one more star that's a little bit larger right on her bodice.
06:07 Maybe I'll put two more little stars right next to it.
06:16 Now for the crowning touch, you can make a wand and a hat for your fairy princess.
06:24 I love to use a real doll for this cake so that the birthday girl can keep it as an extra
06:28 special memory.
