00:07 I'm Lori Gelman and toy trains are such a huge favorite of boys and girls
00:14 that all kids are gonna love this train cake. Moms, you can engineer this yourself
00:19 with a little direction from our conductor, Leve Hansen, for Betty Crocker Kitchens.
00:23 Hey Leve, how are you? Hi Lori, how are you? Good to see you and I'm excited about doing a train cake.
00:27 I thought initially, oh, perfect for a boy, but actually my girls love trains.
00:31 Yeah, you could do it for anybody. Terrific, let's go. Okay, what you're gonna need are two cakes
00:35 baked in a loaf pan.
00:36 Have you noticed there's little domes on the top of each? I'm gonna slice off the dome.
00:40 I'm using a serrated knife. Makes it really easy to cut across. It's sort of like cutting bread.
00:45 You wouldn't want to cut bread with just a dull knife.
00:47 Right, and I see these are a little chilled too. Yeah, you wanna chill your cakes
00:51 maybe in the freezer for about half an hour to 45 minutes and that will firm it up
00:55 and you'll have fewer crumbs. So one of these is gonna be the engine
00:59 and the other one's gonna be the train cars. So I'm gonna make this one into the train cars
01:03 and basically all you have to do is cut it in half
01:05 and then in quarters. So the next step is we're gonna cut off two sections off the side
01:12 just to make it a little narrower. Oh, because it's the engine car.
01:18 It's the engine. Wanna take that? Yep. Now
01:21 we're gonna cut at an angle a little piece off here
01:24 and a little piece off here.
01:28 So then we're gonna cut a little piece out, a little section.
01:31 I'm gonna carve down halfway. You don't wanna go all the way through the cake.
01:36 Right. And then I'm gonna take a smaller knife because it's a little easier to control
01:39 and I'm gonna cut that portion out. Just lift it up.
01:44 Oh, okay. And then I'm gonna place it here. Oh, it's a little height. Exactly.
01:48 And now we're gonna start assembling and crumbing our cake.
01:51 I have some colored frostings over here. We have blue and green and yellow
01:55 and we're gonna use that to crumb coat our cake. Now what I would recommend is
01:59 first put a nice dollop on top and just smooth it out and some of it will come over the sides
02:03 and that'll help you frost the sides. For the top, what I recommend doing is
02:07 trying to use the full length of your spatula and sort of go back and forth
02:11 pushing us, you know,
02:12 with a pretty firm touch back and forth, almost like a wave.
02:15 You can see I angle my spatula just a little bit. Oh, I see. Okay.
02:19 And then for a small cake like this you have an option. You can do the sides first
02:23 after you have all your icing on and that gets a lip on the top and you can
02:27 scrape that off or you can do the top first and then just sort of scrape it off
02:32 down the side and pull away.
02:35 Now the hardest part is the corners. So what I recommend is going
02:38 all the way up and even over the corner a little bit so again you get that lip
02:42 on that corner and then you can scrape it off. Oh, I see. Okay.
02:46 What we're going to do is after you have everything crumb coated, we'll put it in the fridge.
02:49 I just want to show you one thing about this. You can actually use
02:53 the chocolate frosting as a glue
02:57 because if you're going to start icing this, this piece is going to move around so you just want to
03:01 adhere it.
03:01 Just use a little bit of dollop of that. Great.
03:04 And then you would crumb coat this as well. And then you would crumb coat it all, but I have one ready to go.
03:08 Thank goodness. Okay, so let's move this out of the way.
03:11 Looks good.
03:18 This one's ready to frost. Okay. So I'm going to start with the blue.
03:21 I'm frosting the top first.
03:25 Then I'm going to do the sides. Another trick when you're doing
03:29 rectangular or square cakes is to put a little extra frosting on the corners
03:33 because sometimes they tend to sag over a little bit. So again, I'm just getting it
03:38 covered. Looks a little messy, but we're going to clean it up after it's completely
03:43 covered.
03:44 So now that we have it frosted, I think we'll assemble it on the tray before we put the
03:48 candies on.
03:49 I'm actually going to pipe a train track on first. Oh, cool.
03:56 I'm just using a pastry cone filled
03:59 with the chocolate frosting that we were using before. And you can get a pastry cone
04:04 where? Well, this one I made. You can make them out of parchment paper
04:08 or cellophane. You can also buy disposable pastry bags or you can buy
04:12 decorating tubes that already have icing in them. Great.
04:19 What I'm doing is I'm holding in place and squeezing until I have a little dot,
04:23 then pulling across and ending on another dot and sort of
04:26 tail off by swishing your pastry cone quickly.
04:30 Sometimes if you get breaks, that means that you're not squeezing hard enough and
04:33 you're moving too fast.
04:34 So now it's time to put the trains on the tracks. So what I have is a larger
04:39 offset spatula. You can use a pancake spatula, any kind of spatula you can find that's
04:42 pretty flat.
04:43 And push it underneath the cake
04:46 and then gently lift up and get your hand under there to guide it.
04:49 And then we're going to place it right down
04:52 on the track and slide it out. Now it's time to decorate it with candy.
04:57 So we have these little gummy rings. So what we can do is put two
05:01 on each like that. And the tops
05:07 are going to get a little bit of
05:12 licorice. So now it needs its cargo.
05:16 So let me turn that around again and maybe
05:19 we can put some little chocolate candies in this one or jelly beans.
05:24 And I'm actually going to put a little coal in this
05:28 steam engine. That looks great. That looks perfect.
05:31 Let me do some jelly beans too. And we also have these little gummy rings.
05:35 We can put another one to keep it nice and colorful. I'm also just going to put a little
05:39 some cookies in here. And then we're going to decorate the front of the steam engine.
05:44 So now it's time to do the smokestack.
05:47 And you can use little peanut butter cups or whatever candies you like.
05:51 Just place them right there and maybe some lights. So I'm going to put the front grill on and I'm going to use
05:56 licorice again.
05:57 That is one cool looking train.
