00:00Well, today I'm going to show you a Hot Stir-Fried Broccoli Salad.
00:09I'm going to slice this, like so.

00:28For which I'm going to use Extra-Virgin Olive Oil.

00:37I'm going to add in the Onions.
00:40And these, like I said, are thick cut Onions, remember that.
00:43Just a touch of Salt.
00:47And this gets stir-fried on high flame.
00:51To this, I'm going to add in Garlic.
00:53Now, this is Garlic sliced.
00:56Well, for this recipe, you can either choose Garlic or Ginger.
01:00I personally prefer Garlic in this recipe.
01:02Nevertheless, a few flakes of Ginger here and there,

01:39Now, in this case, I've not cut Broccoli into florets,
01:42I've just cut it with its stem on.
01:45It's just about using the entire vegetable,
01:47Because it's in season, so make the best use of it.
01:52Toss this on high flame.
01:56And while, this is getting those little bit of scotch marks,
02:00We're going to make a quick slurry.
02:01For slurry, I'm going to use Cornstarch.
02:06To this, I'm going to add in Vinegar.
02:08Now, you can choose Red Wine Vinegar, White Wine Vinegar,
02:11Any Wine Vinegar or just plain Malt Vinegar,
02:13Works wonderfully well.
02:14This is White Vinegar.
02:17Along with that, some Honey,
02:20For that beautiful, luscious sweetness.

02:26Soya Sauce.
02:28But this is light Soya Sauce,
02:30Because here, in this case, you're not looking at any colour.
02:32A pinch of Salt, remember the fact,
02:35That you'd already added Salt in the Onions.
02:38And the slurry is made with Cold Water.
02:45Mix all of this well, till it's nice and lump-free.
02:49With this, a lump-free slurry is done and ready.
02:52This goes right on to the Broccoli.
02:55And the beauty of this slurry is that this,
02:57Is going to make it absolutely clinging.
03:00It's literally going to coat it,
03:01It's literally going to glaze it and that's what we're looking at.
03:03This is not going to be saucy,
03:04It's not going to be syrupy and juicy,
03:06So remember that, make the slurry accordingly.
03:08Just follow the recipe, and you'll get it right.
03:10Well, in case you're wondering,
03:11I'm going to make a quick slurry,
03:13And I'm going to add in a little bit of Water.
03:14And I'm going to add in a little bit of Salt.

03:46Today, we're making a quick and easy Stir-Fry recipe,
03:49But a Garlic Broccoli.
03:51I'm going to start with a little bit of Oil in a very hot pan.
03:56Around 1 teaspoon should be enough.
03:58This is just to make sure that our Butter doesn't burn very quickly,
04:02As soon as we add it to the pan.
04:04I'm adding 1 tablespoon of Butter.
04:06You can use as much or as little as you like.
04:10Once the Butter melts, I'm going to add in some Cloves of Garlic.
04:14I'm using about 5 to 6 Cloves.
04:16We're going to cook the Garlic till the rawness goes away.
04:19You'll be able to smell it very easily.
04:22The Garlic has a little bit of color and it smells divine right now.
04:26I'm going to add in some Sliced Onions.
04:28We're using 1 Sliced Onion.
04:30And I'm just going to saute this for 30 to 40 seconds.
04:34I just want them to become soft.
04:36And to speed up the process, I'm going to add a pinch of Salt.
04:40I have used Salted Butter in the recipe,
04:42So I'm being very careful as to how much Salt I add.
04:45Now the Onions have softened a little,
04:47It's time to add in our Broccoli.
04:50This is about 200 grams of Broccoli Florets.
04:57I'm going to add a pinch of Salt again,
05:00Just to make sure the Broccoli is nicely salted and seasoned.

05:23And it will make sure that it retains its crunch.
05:26You'll know that your Broccoli is done,
05:28When the stalks from the center are no longer white in color.
05:33To add a little bit of heat, I'm going to add in some Chili Flakes.
05:37Stir it around for 10 to 20 seconds.
05:39And you have an appetizer ready.
05:42You can serve it as it is,
05:44If you're planning to serve this as an appetizer.
05:46But I'm going to turn this into a saucy mixture.
05:49So that I can have it with either rice or noodles.
05:52So I'm going to add in a little bit of Corn Flour.
05:55Along with some water, making a quick slurry here.
06:01Make sure there are no lumps from the Corn Flour.
06:05And add it to the center of your pan.
06:08And quickly mix it.
06:11I'm going to add in a little more water.
06:14And we'll let the sauce thicken, as we stir it around.
06:18You can adjust the consistency of the sauce,
06:20By adding a little more water, if you like.
06:22Once the sauce turns transparent,
06:24Your Butter Garlic Broccoli will be ready to serve.
06:32Let's begin with the recipe for Tandoori Broccoli.
06:35So the first step is cleaning of the Broccoli.
06:38So cut the Broccoli into small pieces.
06:40And then cut it into small pieces.

07:39So I have over here, 1 cup of hung Curd.
07:42Basically, just take Curd,
07:44Put it in a sieve with a bowl at the bottom.
07:47And keep it in the refrigerator for at least a good 4-5 hours,
07:51To let all the water drain.
07:53And then, we are going to add in all the other ingredients.
07:571 tsp of Kashmiri Red Chilli Powder.
08:011 tsp of Garam Masala,
08:03Or you can even use Tandoori Masala,
08:05Whatever you have handy.
08:071 tsp of Black Salt.
08:101 tsp of Chaat Masala.
08:13Go a little easy on Salt,
08:15Since we have already added Chaat Masala and Black Salt.
08:191 tsp of Ginger and Garlic Paste.
08:221 tsp of Lemon Juice.
08:25Next, I am going to add in 2-3 tbsp of Roasted Gram Flour.
08:29You can adjust the quantity of Gram Flour,
08:32As per the consistency of the Curd.
08:34So if you feel there is too much moisture,
08:36Add a little more.
08:391 tbsp of Oil.
08:41Preferably use Mustard Oil,
08:43Because Mustard Oil gives a nice punch to this marination.
08:46Mix all the ingredients of the marination properly.
08:51And now into this, I am going to add in the Broccoli Florets.
08:55Make sure you drain out all the water from the Florets.
08:59Use your hands to coat the Broccoli nicely with all the marination.
09:04Once the Florets are nicely coated,
09:07Keep them in the refrigerator to chill for about 30 minutes.
09:16These Florets are now ready to be grilled.
09:19So I have a steel skewer over here.
09:21This is a basically a Tikka Skewer.
09:24And I am going to skewer the Florets.

09:29You get it very easily or it's even available with the ovens that you have at home.
09:33And now we are going to skew every Broccoli Floret.
09:39Be very careful, don't break it.
09:42Skew the Florets in such a way that they are well balanced on the skewer.

09:49And now I am going to grill them directly on the flame.

12:44Well, do not waste your time in grating and chopping and things like that.

12:49And lastly, I'm also going to add in some Spring Greens.
12:52Allow this to simmer for say 15 to 20 minutes.
12:55After which, we're going to run this into a puree.
12:58Do not cover this, otherwise the soup will get discoloured.
13:05For that extra creaminess, let's add in a few pieces of Paneer.
13:12Keeping a few aside.
13:13This will not only add into the creaminess.
13:15But also to the taste and flavour of this recipe.
13:18Let's give this a quick mix.
13:21Say another 2 minutes and the Broccoli should be done.
13:24We shall blend this and serve immediately.

13:42With this, your creamy, hearty, wholesome Broccoli Soup.

13:55So let's see how.
13:56So I have here, 1 and a half cups of Paneer Pasta.
14:00You can take any pasta of your choice.
14:02The water is boiling, add the pasta in.
14:05A tablespoon of Oil.
14:07Some Salt.
14:09Give this a stir and let this boil for around 11 minutes.
14:14While the pasta is boiling, let's saute some vegetables.
14:17So in the pan, I'm going to heat a tablespoon of Butter.
14:21The total quantity of Broccoli I'm using in this pasta is around 250 gms.
14:25So into this, I'm going to saute around 1 cup of Florets.
14:29I have some Yellow Courgette or Yellow Zucchini here, that I've sliced.
14:341 Carrot, chopped.
14:361 cup of Red Capsicum, that I've chopped.
14:39Sauce these vegetables.
14:41Just cook them for a minute and a half.
14:46Let's remove these vegetables in a bowl.
14:50The vegetables have been sauteed, and now I'm going to make the sauce.
14:53Now the base for the sauce is also Broccoli.
14:56So in a mixie jar, add in a cup of Broccoli Florets.
15:01As I said earlier, I'm going to use all the parts of Broccoli.
15:05So this is the stalk of the Broccoli, I've peeled it nicely.
15:09Now let's roughly chop it.
15:11And add it in.
15:12Half a cup of Basil.
15:15Just a tbsp of Coriander Leaves.
15:1710-12 Cloves of Garlic.
15:192 Walnuts.
15:20A tsp of Chilli Flakes.
15:22A tsp of Oregano.
15:242 big pinches of Pepper Powder.
15:281 tsp of Sugar.
15:31Let's make a coarse paste out of all these ingredients.
15:34I'm using 1 tsp of Cumin Seeds.
15:361 tsp of Turmeric.
15:381 tsp of Salt.
15:391 tsp of Black Pepper.
15:41Out of all these ingredients.
15:45The paste is ready.
15:47As you can see, it's a coarse paste.
15:51Turn on the flame.
15:52Add in some Butter.
15:54Add in the Broccoli Paste.
15:57Saute this just for a minute and a half.
16:01Don't cook the paste for very long, otherwise the colour is going to get ruined.
16:05Just a quick saute and do it on high flame.
16:08Let's add in 1 fourth cup of Fresh Cream.
16:11Give this a good mix.
16:17The pasta is cooked.
16:18But I'm going to use this water.
16:21So add some into the sauce.
16:24To get the right consistency of the sauce.
16:29Salt to taste.
16:35Drain the pasta.
16:38And add it in the sauce.
16:42Add in the vegetables.
16:45Some Cheese of choice.
16:47You can even add Parmesan.
16:50Let's give this a final toss.
16:54As you can see the beautiful colourful pasta.
16:59And this is done.
