Ingredients:
Water (for boiling)
1 cup Gram Flour
½ tsp Coriander Seed Powder
¼ tsp Turmeric Powder
½ tsp Red Chilli Powder
¼ tsp Cumin Seed Powder (roasted)
¼ tsp Garam Masala Powder
Salt (as per taste)
1 tbsp Curd
1 tbsp Oil
½ tsp Carom Seeds
Water (as required)
Oil (for greasing)
1 inch Ginger (chopped)
6-8 Garlic Cloves (peeled)
3 Green Chillies
1 cup Coriander Leaves (chopped)
1 tbsp Ghee
1 tsp Carom Seeds
2 Dried Red Chillies
¼ tsp Asafoetida
1 tbsp Gram Flour
1 cup Curd
½ tsp Coriander Seed Powder
¼ tsp Red Chilli Powder
½ tsp Cumin Seed Powder
¼ tsp Garam Masala Powder
Salt (as per taste)
1½ cups Water
1 tbsp Fenugreek Leaves
Chilli Oil (for garnish)

00:00Today I have a recipe hailing from the royal kitchens of Rajasthan
00:04which is Hare Masale ki Gatte ki Sabzi.
00:07I'm going to start with boiling a pot of water
00:10and then make the dough for the gattas.
00:12Bring this to a boil.
00:151 cup of gram flour or besan.
00:17Half a teaspoon of coriander seed powder.
00:211 fourth teaspoon turmeric powder.
00:24Half teaspoon red chilli powder.
00:271 fourth teaspoon roasted cumin seed powder or jeera powder.
00:311 fourth teaspoon garam masala powder.
00:34Salt to taste.
00:36A tablespoon of curd.
00:39Also a tablespoon of oil.
00:42Give all these ingredients a good mix
00:46and make a dough.
00:49Half a teaspoon of ajwain or carom seeds.
00:52Use very little water to make this dough.
00:58And this dough is ready.
01:00Grease your fingers a little
01:02as well as the board.
01:04Take a portion of the dough.
01:11Roll it into a half inch dia log.
01:20Let's cut it into half.
01:23Keep it aside.
01:24In this way roll out the logs.
01:32Make sure the water is boiling.
01:34Very carefully drop the gattas in it
01:37and let this boil for a good 10-12 minutes.
01:41Let's quickly make the hara masala.
01:43Just a very simple hara masala.
01:45I have a piece of ginger here.
01:476-8 cloves of garlic.
01:493 green chillies.
01:51A cup of coriander leaves.
01:54Grind all these ingredients into a fine paste.
01:59The gattas should be ready.
02:01Once you see that it's cooked from the centre
02:05just bring them out and cool them.
02:13Cool them down.
02:15All the prep is done.
02:16Let's start making the gattas.

02:21Turn on the flame.
02:22Heat a tbsp of ghee.
02:24Add in a tsp of ajwain or carom seeds.
02:282 dry chillies.
02:301 tsp hing or asafoetida.
02:331 tbsp of gram flour.
02:35And roast it slightly.
02:39Roast it till it changes colour.
02:41Next add in the green paste.
02:44Give it a stir.
02:47Saute the paste for a few seconds.
02:49Next add in a cup of curd.
02:52Quickly whisk it in.
02:54And keep stirring vigorously.
02:57Whisk the curd properly.
03:01Add in 1 tsp of coriander seed powder.
03:051 tsp of red chilli powder.
03:081 tsp of cumin seed powder.
03:111 tsp garam masala powder.
03:14Salt to taste.
03:16Whisk it in.
03:17Let's add in 1 and a half cups of water.
03:21And bring this to a boil.
03:24The gattas have cooled down.
03:26Let's cut them into half inch pieces.
03:33The curry is boiling.
03:34Let's add in the gattas.
03:36And let them boil for 5 minutes.
03:41Let's add in a tbsp of kasuri methi.
03:46Give it a final stir.
03:48And turn off the flame.
03:51Time to plate.
03:52Enjoy this with your favourite chapatis or paratha or even rice.
