Bread pudding is a classic dessert that is hot, sticky, sweet and salty. Add apples and walnuts to make it a seasonal treat!
Ingredients:
¼ cup Sugar
3 Apples (peeled & diced)
Add into water
½ cup Walnuts
¼ cup Raisins
½ cup Cornstarch
½ ltr Cold Milk
7 tbsp Sugar
1 tsp Vanilla Essence
1 tsp Cinnamon Powder
6-8 Bread Slices
Butter (as required)
Icing Sugar (for dusting)

00:05 Let's begin.
00:06 Let's take Grain Sugar.
00:08 And add it into the pan.
00:11 Allow this to caramelise undisturbed.
00:15 And while that's happening, let's quickly start dicing or slicing the apples.
00:20 Well, if you realise I've already peeled the apples and kept that in water.
00:24 So that the oxidisation is at its least.
00:29 Our apples are cut and ready.
00:31 Let's look back at the caramel.
00:33 Let's stir this well, if you see it's grainy at an end.
00:36 And it's caramelising already.
00:38 This is the time when we stir all of this.
00:40 Let's add in our apples.
00:43 Ensure at this stage you do not burn yourself or scald yourself.
00:48 With the steam that's jutting out.
00:50 At this stage the caramel has reset because of the cold apples.
00:55 But do not worry, we'll be adding the apples in a little while.
00:58 So let's add in the apples.
00:59 But do not worry, continue cooking.
01:01 It'll soon start releasing moisture.
01:04 Time to add in the walnuts.
01:07 And along with this, golden raisins.
01:10 While the apples are getting caramelised and cooked.
01:12 Let's now move on to making the custard for the pudding.
01:15 Begin with Cornstarch in a cold pan.
01:18 Cold Milk, say half a cup.
01:20 And we ensure that the Cornstarch dissolves properly.
01:27 Once it's lump free, I'm going to add in the remaining milk.
01:31 Along with this, Grain Sugar.
01:36 Vanilla Essence.
01:38 And lastly, Powdered Cinnamon.
01:40 Turn the flame on.
01:41 And begin whisking.
01:44 Apple mixture is done and ready.
01:53 Let's transfer this straight into the baking pan.
01:58 Our Apple, Caramel, Walnut, Raisin mixture is done and ready.
02:01 It's already in the casserole.
02:02 I also have the custard mixture which now has Cornstarch,
02:05 it has Vanilla Essence, it has Cinnamon for flavour.
02:08 Getting cooked.
02:09 Let's move on to the third component of this recipe,
02:12 and that is the bread of course.
02:13 Now for this, what I like to do is,
02:15 I actually create a bread butter sandwich.
02:18 Get the trimmings off and then dice that and put it into the pudding.
02:22 So let's do that.

02:53 Our pudding mixture has also well thickened.
02:55 If you quickly dip a spoon and check.
02:58 This is just about perfect.
03:01 Time to pour this on top of the bread.
03:04 Now once the pudding mixture goes on top of the bread,
03:12 I like to do two things, one is,
03:14 personally, I like to push the pieces of bread,
03:18 a little into the pudding mixture for a simple reason,
03:21 because the angles that are literally jutting out of the pudding,
03:24 become crispier.
03:25 Which is fine, but the whole idea is sometimes they also get burnt,
03:29 which is kind of untoward, it gets that,
03:31 very different kind of a burnt mouth feel,
03:34 which I personally do not like in my puddings.
03:36 And the second thing that I also do is,
03:38 I allow this to rest,
03:40 like that at room temperature,
03:42 for at least 15 to 20 minutes.
03:44 What happens in that case is,
03:46 the bread absorbs all the mixture wonderfully well.
03:50 You know it gets nice and soft,
03:51 the whole butter also starts leaching out.
03:54 It's wonderful, try this.
03:55 Trick number three actually is,
03:57 if you can make this custard mixture a day before,
04:01 well nothing like it.
04:02 The last and the final step is now,
04:04 to put this into the oven at 200 degrees Celsius,
04:07 20 minutes, just about perfect.
04:09 And with this ladies and gentlemen,
04:28 Apple Walnut Bread Pudding done and ready.
04:31 At this stage, it's wonderful caramelly molten.
04:34 Also when you start digging into this,
04:36 you'll realize there's also a touch of salt,
04:38 which is actually coming from the salted butter.
04:40 If you're not a great fan of salted caramel,
04:44 use unsalted butter.
04:46 But what's important is, try this.
04:48 Make this for your family, make this for your friends.
04:50 Have it warm, have it cold, have it room temperature.
