00:00Today, I'm going to do something absolutely unique.
00:02We are making rose-shaped momos.
00:04Let's see how to make them.
00:06I'm going to start by making the dough.
00:08I have half a cup of all-purpose flour here.
00:11I'm going to season this with a pinch of salt, hot water,
00:14adding in one tablespoon at a time,
00:17and I'll use a fork to mix it together.
00:22Just going to check the consistency with my hands.
00:26Seems good, I will start kneading the dough now.
00:29Once it comes together, I'm going to take it out
00:31on a flat surface and knead it properly.
00:36You'll require a lot of elbow grease to make this soft,
00:39so be ready for a workout.
00:41If the dough is not kneaded properly,
00:43the momos will crack and not look so good,
00:46so make sure you're kneading it very well.
00:49Form a small ball, cover it, and rest for at least an hour.
00:55While the dough is resting, let's prepare our filling.
00:58I'm going to add in two teaspoons of oil,
01:00adding in some chopped onions.
01:02I'm going to cook all the vegetables
01:04on medium to low flame.
01:06Along with the onions, I'm adding in some chopped mushrooms.
01:10These are oyster mushrooms.
01:15Next, I'm adding in one cup of chopped cabbage.
01:21Next, I'm adding in one-fourth cup of chopped carrot.
01:24Toss it around and cook it till the cabbage wilts.
01:29I'm going to add in salt to season this
01:31and draw out a lot of the moisture from the cabbage.
01:35The cabbage has wilted,
01:36now it's time to add in our flavorings.
01:38I'm going to add in minced garlic, one teaspoon,
01:42half a teaspoon of black pepper,
01:44and one tablespoon of garlic chives.
01:47Toss this around, and it will smell really amazing
01:51as soon as it hits the pan.
01:52Once aromatic, you can start adding in capsicum.
01:56And lastly, I'm going to add in spring onion greens.
02:00I'm going to add in one teaspoon of dark soy sauce.
02:04Make sure to cook it properly
02:06so that the filling is not too wet.
02:08The filling is ready, now we let it cool completely.
02:12The dough is well rested.
02:13Let's start rolling it out.
02:16This is how smooth the dough should be.
02:18I'm looking for a super thin sheet.
02:21It should be so thin
02:22that when you hold your hand below the sheet,
02:25you should be able to see the color of your skin.
02:28Now, using a round steel cutter,
02:29I'm going to cut small circles.
02:36Take away the excess.
02:38You can always reuse this.
02:40Just bring it together and let it rest for 10 minutes.
02:44We have 24 circles ready over here.
02:47Let's start making our rose-shaped momos.
02:49I'm going to take three of them side by side.
02:53I have a bowl of water here,
02:54which is going to act like a glue.
02:56I'm going to dip my finger
02:58and apply a little bit of water on two sides.
03:03And I'm going to overlap one circle over the other.
03:06Don't apply too much water, otherwise it won't stick.
03:10We're going to add our filling in this section
03:12and make sure that you don't overfill the momos.
03:15Now, I'm going to apply a little bit of water right here.
03:20Now, we're going to close the circles,
03:22keeping the filling in between.
03:25You may need a little practice to do it at first.
03:28Pinch the dough together so that it sticks properly.
03:32And now, we will roll it onto itself,
03:39adding a little bit of water right at the end
03:43and closing the rose.
03:45This looks absolutely pretty.
03:47Pinch it once again to ensure
03:49that the filling stays inside the momos.
03:55Our rose-shaped momos are ready to get steamed.
03:57I'm going to add a baking paper at the base of my steamer,
04:01just to ensure that they don't stick
04:03because they're quite delicate.
04:05I have a steamer right here, which is ready to go.
04:07I'm adding in my baking paper.
04:10I'm also going to oil this a little bit,
04:13adding in a few drops of oil for some extra precaution.
04:16Now, using a brush, I'm just going to spread this around.
04:19I'm going to place in these cute little momos one by one.
04:27I'm going to cover this and let it cook for 12 minutes.
04:31It's been 12 minutes.
04:32Let's check on our momos.
04:34The skin is nice and transparent,
04:36and our rose momos are looking absolutely gorgeous.
04:40Do give this recipe a try.
04:42I know it's a labor of love,
04:43but you're absolutely going to enjoy it.
04:46Let me know how it turns out.
04:47This is Chef Pumika signing off from Rajshri Food.
