Learn how to make at home with our Chef Ruchi Bharani

Ingredients:
2 Carrots (chopped)
1 cup Cabbage (chopped)
1 Onion (chopped)
1 Capsicum (chopped)
2 Green Chillies (chopped)
¼ tsp Garlic (chopped)
¼ tsp Ginger (chopped)
Salt to taste
½ tsp Cornflour
1 pinch Pepper Powder
1 tsp Soy Sauce
1½ cup Plain Flour
1 tbsp OilSalt
Plain Flour
Oil (for frying)
1 tbsp Oil
1 tbsp Ginger (chopped)
1 tbsp Garlic (chopped)
1 Green Chilli (sliced)
2 Tomatoes (boiled & puréed)
1 tsp Kashmiri Red Chilli Powder
1½ tbsp
Ketchup
1½ tbsp Chilli Sauce
1 tbsp
Soy Sauce
½ tsp
Sugar
Salt to taste
Spring Onion (chopped)

00:00 Momos, a trending recipe amongst the youth.
00:02 And today I'm going to show you 2 versions of it.
00:05 I'm going to be making fried Momos and then tossing it in my special sauce.
00:10 So let's see how.
00:11 Let's start with making the filling first.
00:17 I have a bowl here and I've kept a muslin cloth over it.
00:21 And now let's add in the vegetables.
00:23 2 Carrots, finely chopped.
00:25 1 cup finely chopped Cabbage.
00:29 1 Onion, finely chopped.
00:30 1 Capsicum, finely chopped.
00:32 2 Green Chillies, finely chopped.
00:34 1/4th tsp finely chopped Garlic.
00:37 1/4th tsp finely chopped Ginger.
00:41 Salt to taste.
00:42 Mix the salt with all the vegetables.
00:46 And let it rest for about 5 to 6 minutes.
00:49 So that all the water oozes out.
00:52 After 5 minutes, make sure you squeeze out all the water.
00:57 And now let's remove these vegetables in another bowl.
01:06 Let's add in 1/2 a tsp of Cornflour.
01:12 A pinch of Pepper Powder.
01:14 A tsp of Soy Sauce.
01:17 Give all these ingredients a good mix.
01:20 And this filling is ready.
01:23 I've already made the dough here.
01:25 I've taken 1 1/2 cups of Plain Flour.
01:28 1 tbsp Oil.
01:30 And a little bit of Salt.
01:32 And just make a soft dough and let it rest for about 30 minutes.

01:44 And now let's start shaping them.
01:47 Take a small portion of the dough.
01:50 Take some Plain Flour.
01:55 Dust the bowl and the board.
01:57 And now let's make the Momos wrapper.
02:00 This is the thickness of the wrapper that I would need.
02:10 Just cut it with a 3 inch sharp edged bowl.
02:15 Remove the excess dough.
02:19 Place the filling in the centre.
02:22 Gather all the ends.
02:24 I like to make bite size Momos.
02:28 So that they don't fall apart while eating them.
02:32 Few of the Momos are shaped and ready.
02:48 And now let's make the Pan Fried Momos.
02:50 The Momos are shaped and ready.
02:52 And now let's deep fry them.
02:54 So I have a pan of hot oil here.
02:56 Drop them in medium hot oil.
03:00 And deep fry them on medium flame.
03:03 Fry them till they are brown in colour.
03:11 These are beautifully cooked.
03:15 Let's get them out.
03:17 The Momos are fried and ready.
03:19 And now let's make the sauce.
03:21 For that let's heat up a tbsp of Oil in a pan.
03:25 Add in a tbsp of finely chopped Ginger.
03:28 A tbsp of finely chopped Garlic.
03:31 1 Green Chilli finely sliced.
03:33 Cook the aromatics for a few seconds.
03:35 2 Tomatoes boiled and pureed.
03:40 Cook the puree for at least a good 3 to 4 minutes.
03:43 The puree is bubbling since the last 3 to 4 minutes.
03:46 Now let's add in all the seasoning ingredients.
03:48 1 tsp Kashmiri Red Chilli Powder.
03:51 1 1/2 tbsp Ketchup.
03:54 1 1/2 tbsp Chilli Sauce.
03:58 1 tbsp Soy Sauce.
04:00 1/2 a tsp Sugar.
04:02 Salt to taste.
04:04 Mix all these ingredients together.
04:07 And let it cook.
04:09 Now let's make the sauce.
04:11 Heat up a pan and let it cook.
04:13 The sauce is ready and the Momos are fried as well.
04:17 So now let's toss them together.
04:20 The sauce is nice and thick.
04:22 Let's add them in.
04:24 Make sure they are well coated.
04:27 Add in some Spring Onions.
04:36 Toss it.
04:38 And these Momos are ready.
04:41 You can serve the sauce that I made separately with the fried Momos.
04:45 Or you can toss them in.
