Learn how to make Broccoli Clear Soup at home with our Chef Ruchi

Broccoli Broth is a super healthy broth which you can have as a low carb soup made of lots of veggies like broccoli, carrots and onions.

Ingredients:
3 cups Water (for boiling)
Broccoli Stalks
1 Onion (chopped)
4-5 Garlic Cloves (peeled)
1 Tomato (chopped)
1 inch Cinnamon Stick
1 Clove
1 Bay Leaf
Salt (as per taste)
1 tbsp Butter
1 Onion (chopped)
1 tbsp Garlic (chopped)
1 tbsp Celery (chopped)
1 cup Broccoli Florets
½ Yellow Zucchini (chopped)
1 Carrot (chopped)
4-5 Spinach Leaves
½ tsp Oregano
A pinch of Chilli Flakes
Black Pepper (as per taste)
Salt (as per taste)
6-8 Basil Leaves

00:03 here's a recipe for you.
00:04 Today's recipe is Broccoli Clear Soup.
00:07 The reason why I am using Broccoli for this soup,
00:10 is for its health benefits and nutritional value.
00:13 The stock that I am using is equally nutritious,
00:16 and contains Calcium and other minerals,
00:18 and improves immunity.
00:20 So let's begin with this recipe.
00:22 I have taken 3 cups of water over here.
00:25 And now into this, I am going to add in a few ingredients to make the stock.
00:29 Into this, I am going to add in the Broccoli stock,
00:32 1 Onion chopped,
00:34 4-5 cloves of Garlic,
00:37 1 Tomato chopped,
00:39 1 stick of Cinnamon,
00:43 just 1 Clove,
00:44 1 Bay Leaf,
00:46 a big pinch of Salt,
00:48 bring all these ingredients to a boil.
00:52 You need to boil the stock for at least a good 8-10 minutes.
00:56 The vegetables that you add in the water determines the flavour of the clear soup.
01:00 And now I am going to saute a few more vegetables to make this soup.
01:03 So in a pan, heat a tbsp of Butter.
01:06 Let's add in 1 small Onion finely chopped,
01:09 1 tbsp Garlic finely chopped,
01:12 1 tbsp Celery finely chopped,
01:15 saute all these ingredients till they are nice and soft.
01:22 Let's add in a cup of Broccoli florets,
01:26 1/2 a Yellow Zucchini,
01:30 1 Carrot chopped,
01:32 just tear in a few Spinach leaves,
01:36 make sure you wash them properly.
01:38 Cook the vegetables for 2-3 minutes.
01:42 The vegetables have been cooking for the last 3 minutes,
01:45 and the stock is ready too.
01:47 Let's turn off the flame,
01:48 and strain it and add it into this.
01:52 Strain it with a fine sieve.
01:54 We are just going to use the water.
01:58 And now bring this soup to a boil for around 2 minutes.
02:02 Let's season this soup with a few Herbs and Spices,
02:07 1/2 a tsp of Oregano,
02:10 a big pinch of Chilli Flakes,
02:15 Pepper to taste,
02:17 little more Salt,
02:20 tear in a few Basil leaves,
02:22 give this a good mix,
02:27 and bring it to a boil.
02:28 This soup is ready, turn off the flame,
02:35 and let's pour it in a bowl.
02:41 With very minimal flavours,
02:43 this bowl of hearty soup is going to open up all your senses.
