INGREDIENTS
• 2 small cups thick poha - red or white beaten rice or flattened rice
• 2 small onion - finely chopped (kanda or pyaaz)
• 2 small potatoes
• ¼ teaspoon turmeric powder (haldi)
• 1 teaspoon mustard seeds (rai)
• 1 teaspoon cumin seeds (jeera)
• Small bowl of peanuts
• 10 to 12 curry leaves (kadi patta)
• 2 green chilli (hari mirch), chopped
• 1 teaspoon sugar or as required
• 1 or 1.5 tablespoon oil
• salt as required
• Fresh bunch of coriander leaves
Preparation-
1. rinse the poha in water 2-3 times and add sugar, salt and turmeric powder to the poha, gently mix & keep it aside.
2. Fry peanuts in oil ,till they become crunchy & keep it aside
3. Chop potatoes in small pieces & fry it in oil & keep it aside
4. Heat oil in the same pan.
5. crackle the mustard seeds first then cumin seeds, curry leaves, green chilles & chopped onions
Now add the poha, peanuts & fried potatoes and stir (mix)well. Then cover and steam the poha for 2-3 minutes on a low flame for 5 minutes
After 5 minutes switch off the flame, remove the lid and garnish it with chopped coriander leaves and serve it hot.
Your delicious kanda poha is ready to eat.
