Sweet Potato Kuzhambu is a delicious South Indian curry that combines the natural sweetness of sweet potatoes with a tangy and spicy tamarind-based gravy. If sweet potatoes are not available, you can substitute them with regular potatoes or pumpkin for a similar texture and taste.

Ingredients -
2 tsp - Oil
¼ tsp - Fenugreek Seeds
1 tsp - Mustard Seeds
1 tsp - Cumin Seeds
½ tsp - Asafoetida
10-15 - Curry Leaves
1 - Onion (chopped)
8-10 - Garlic Cloves (crushed)
2½ cups - Tomato Juice
1 tsp - Coriander Seeds Powder
2 tsp - Red Chilli Powder
¼ cup - Jaggery (chopped)
(as per taste) - Salt
1 big - Sweet Potato (washed, peeled & diced)
2-3 tbsp - Tamarind Water

00:00Well, today's recipe is a Colombo, well written ZH, but pronounced with a R.
00:08This is a Sweet Potato Colombo.
00:12Let's begin.
00:20Well, Colombo is typically from the South of India.
00:23Literally translates to countless.
00:26Well, misconception has it that most Colombo's use a Paruppu,
00:31which is a lentil or a dal.
00:33But keeping all that misconception aside,
00:37there are various versions, literally countless versions.
00:40Some made with tamarind water, some made with buttermilk,
00:43some of course made with lentils.
00:44Primarily a combination of a lot of wonderful things coming in together
00:48and creating like a stew.
00:50Let's see how it works.
00:51First things first, oil in a wok.
00:53Regular vegetable oil.
00:56In order and sequence, fenugreek seeds.
01:03Once these begin to crackle, be adding in mustard seeds.
01:07In this case, black mustard.
01:09Just ensure that the spices do not burn,
01:12but they need to crackle to their optimum.
01:14Cumin seeds, asafoetida, curry leaves.
01:24And along with this, roughly cut onions.
01:26Along with crushed garlic.
01:29Well, I prefer using garlic with its skin on.
01:32Let's begin to stir.
01:34And once the onions just kind of begin to saute,
01:37I'll be adding in the tomato juice.
01:40It's basically a couple of tomatoes that go in the mixer with water.
01:47Let's add this in.
01:48Along with some flavouring spices,
01:51in this case, coriander powder.
01:53Red chilli powder, depending on the spice and the colour that you're looking at.
01:57For that sweet quotient, I'm going to add in jaggery.
02:01Well, jaggery could be yellow or black,
02:03depending on the variety that you can lay your hands on.
02:08Let's give this a quick stir.
02:10And allow this to roll boil on high flame.
02:16Before that, let's season this with salt.
02:20Adding in our washed, peeled and diced sweet potatoes.
02:28And finally, last but not the least, tamarind.
02:31Of course, tamarind has been reserved in cold water for a couple of minutes.
02:36With our finger, we ensure that we release all the pulp clinging onto the fibre.
02:41Collect all of this onto one side.
02:44And push this in.
02:46A quick stir.
02:48And now, there are two things.
02:50One, the sweet potato needs to cook into this.
02:53And while that's happening, this will also reduce
02:56to its wonderful, glorious final avatar.
02:59Sweet Potato Kulambu.
03:10With this now, our sweet potato is cooked and ready.
03:13That's the sign that the Kulambu is also done and ready.
03:17And with this, off goes the flame.
