Ingredients:
¾ cup All-Purpose Flour
½ tsp Salt
1 tsp Powdered Sugar
1 tsp Instant Yeast
⅓ cup Lukewarm Water
All-Purpose Flour (for dusting)
1 tsp Oil
Rest the dough for 1 hour
1½ tsp Oil
2 Garlic Cloves (sliced)
1 Onion (sliced)
Salt (as per taste)
Water (as required)
3 tbsp Harissa Paste
3 tbsp Tomato Puree
½ cup Chickpeas (soaked & boiled)
Mash it lightly
Water (as required)
Let it cool completely
All-Purpose Flour (for dusting)
All-Purpose Flour (for dusting)
Roll it making sure the edges are thin
Add in the prepared stuffing
Oil (for frying)
Cook till golden brown & crisp on one side
Water (as required)
Steam for 10 min.
Open the lid & let the water evaporate
Chilli Flakes (for garnish)

00:00On popular demand, we're back with another Harissa recipe.
00:03We're making Harissa buns today,
00:05which is a fusion between Chinese and Mediterranean cuisine.
00:08Let's see how it's made.
00:10We're going to start with the dough for our bao buns.
00:12I have three-fourth cup of flour over here,
00:15which I'm going to add into my bowl.
00:16Half a teaspoon of salt.
00:18One teaspoon of sugar.
00:20This is powdered sugar.
00:22One teaspoon of instant yeast.
00:24I'm just going to mix the dry ingredients together first.
00:27And now we'll knead the dough with some warm water.
00:30Make sure the water is lukewarm and not too hot.
00:34The warm water will activate the instant yeast quickly
00:38and it will help proof the dough quickly as well.
00:40You will need approximately one-third cup of water
00:43to make the dough.
00:44Once the dough comes together,
00:45remove it on a flat surface and start kneading.
00:48If the dough seems to be a little extra sticky,
00:51add a little bit of dry flour.
00:53After kneading for about five minutes,
00:56add a teaspoon of oil
00:58and knead once again till the dough is soft and supple.
01:01I'm going to form it into a small, tight ball.
01:04And now I'm going to cover and rest this
01:07for about an hour until it doubles in size.
01:10While the dough is proofing, let's prepare our filling
01:13because that also needs to cool down.
01:15We're making the filling with chickpeas today
01:17and our famous harissa sauce.
01:19I already have the recipe for the harissa sauce
01:22I already have a little bit of sauce prepared over here.
01:25I'm going to directly use this today.

01:31Start with around one and a half teaspoon of oil.
01:34Add in two cloves of garlic.
01:36So I'm going to follow the garlic
01:38with some onions that have been sliced.
01:41Adding in a pinch of salt to soften the onions.
01:45The onions and garlic have started catching
01:48a little bit of color.
01:49I'm just going to add a splash of water.
01:53The onions have softened beautifully.
01:56I'm adding in three tablespoons of harissa paste to this.
01:59Three tablespoons of tomato puree.
02:02Toss it around.
02:06And now we'll add in some boiled chickpeas,
02:08around half a cup.
02:13I'm going to mash some of the chickpeas
02:15so that the filling binds together on its own.
02:18I've mashed almost half of the chickpeas.
02:20Now I'm going to add a little bit of water
02:23and bring this to a boil.
02:24The mashed chickpeas will act as a thickening agent
02:27in our filling.
02:29The filling is well cooked and it has thickened as well.
02:32Now we're going to let this cool completely.
02:35I'm not adding any additional salt to the filling
02:37because my chickpeas were boiled
02:39with a little bit of salt already.
02:41The filling has cooled down completely
02:43and the dough has also increased in size.
02:45Now let's start making our bau buns.
02:47I'm going to dust a little bit of flour on the dough
02:50and tip it out onto my surface.
02:53I'm going to flatten this and portion it into six portions.
03:03Start turning the portions into ball.
03:05I'm going to dust it with a little bit of flour
03:08and I'm going to roll this out.
03:12Make the corner super thin.
03:14Now we're going to fill this portion
03:17with our harissa chickpeas
03:19and start pleating the sides.
03:21Just bring it together and start folding.
03:27After making the last pleat,
03:29bring the dough together in the center
03:32and close it completely.
03:34I'm going to make the other six bau in the same way.
03:40Once the bau are shaped, we're going to pan fry them.
03:43I'm starting with a little bit of oil in a pan
03:46which is really hot
03:47and start keeping the bau one at a time,
03:50making sure that you hear a sizzle.
03:52Be very careful as these bau are really delicate.
03:56I want the bottoms to be nice and crispy
03:58with a little bit of color.
04:00Make sure you keep turning the bau in their space
04:04so that they color evenly all throughout.
04:07Once the bau have a beautiful color from the bottom,
04:09we're going to steam the top portion of it.
04:12I'm going to add half a cup of water to the pot
04:16and close the lid on top.
04:18We're going to let this steam for another 12 minutes
04:21so that the top of the bau are also cooked perfectly.
04:24It's been 10 minutes.
04:26Let's have a look inside.
04:27It's very important to let the water evaporate completely
04:31so that the bottoms of the bau remain crispy
04:34even after the steaming process.
04:36Our harissa bau are ready to serve.
