00:01 I always think about potatoes.
00:03 It's such a versatile ingredient.
00:05 Today, we're making crispy smashed potatoes,
00:08 which are going to be crispy from the outside,
00:10 gooey on top with a little bit of cheese.
00:13 Let's see how it's done.
00:15 Today, I'm using baby potatoes.
00:17 I'm going to boil them in the pressure cooker
00:18 for one whistle.
00:20 I'm directly adding it to the water.
00:22 I'm going to add two teaspoons of salt
00:26 while boiling the potatoes
00:27 to make sure they're seasoned well
00:29 from within.
00:30 As soon as I see some steam,
00:33 I'm going to close the pressure cooker.
00:35 While the potatoes are boiling,
00:39 let's make our flavored butter.
00:41 I'm going to start with one teaspoon of oil.
00:44 Once the oil heats up,
00:46 add four to five cloves of garlic that have been chopped.
00:49 Once you start seeing a little bit of color on the garlic,
00:55 add in one tablespoon of butter.
00:58 This is salted butter.
01:00 Along with some chopped coriander.
01:02 When you fry this in oil and butter,
01:04 the coriander will stay nice and green.
01:06 This already smells so good.
01:11 After this bubbles for a while,
01:14 switch off the flame and add in red chili flakes.
01:17 This is around one teaspoon of red chili flakes
01:20 and one teaspoon of pizza seasoning.
01:23 This flavored butter can also be used on breads
01:26 to make it nice and tasty.

01:31 As soon as the potatoes are done,

01:43 and place them in a bowl.
01:44 Place the potatoes on a tray

01:52 so that they have enough space in between them.
01:55 This will ensure that the air circulates properly

02:07 I like to keep the skin on on the potatoes

02:23 So I'm going to add a little more salt to these.

02:29 along with the bits and pieces of garlic,
02:33 red chili flakes, and coriander.

02:38 Garlic and potatoes are a match made in heaven.

02:44 but we're going to make them super crispy
02:46 by baking them at 200 degrees Celsius
02:49 for 15 to 18 minutes
02:50 till they are nice and golden brown.
