00:18 Here we have two types of tawas.
00:24 The first is a non-stick pan and the other is a tri-ply pan.
00:29 Let's first understand what they are.
00:32 I have here with me a non-stick tawa, which as the name suggests, prevents food from sticking.
00:40 And that's possible because of the PTFE coating used in it.
00:44 Now if the food doesn't stick, it automatically becomes convenient and easy to clean up.
00:50 Now let me tell you about the tri-ply tawa.
00:53 It has three layers embedded in it - an inner layer of stainless steel, a middle layer of
01:00 aluminium and an outer layer of stainless steel.
01:04 Tri-ply tawa is suitable for sauteing and searing as it evenly distributes heat.
01:10 Usually, tawas are made of stainless steel, but because they have a layer of aluminium

01:20 I am going to use two different non-stick tawas to cook delicate items like dosa and

01:26 First, I am using Hawkins Futura non-stick dosa tawa, in which I am cooking a dosa.
01:34 One of the benefits of non-stick pans is that you can limit the usage of ghee, butter or
01:40 even oil.
01:41 Now let's add the batter to this pan.
01:49 As you can see, even though the ghee is less, our dosa is cooking quite well.

02:03 Again, I am applying very little butter to it.
02:06 I generally like to use non-stick pans, which are ideal for making fast, easy dishes that

02:22 Before moving on to the tri-ply tawa, here are few things you should keep in mind while

02:29 The coating can wear off over time, affecting non-stick properties.
02:33 Metal utensils and high temperature cooking can damage the non-stick coating.
02:38 Then what is ideal for high temperature cooking?
02:41 The answer is tri-ply tawas.
02:45 I am making chapati in this tawa, because it offers excellent heat control, which makes
02:51 a perfect chapati.
02:52 I can also use them on various stove tops, including induction.
02:58 And as I mentioned, it can handle high heat cooking because of the multiple layers.
03:03 It is also resistant to warping, scratching and wear.
03:07 And I can clean it with most dish washing scrubbers.
03:11 Also, not just chapatis, but these tawas can be used for sautéing and searing with precision.
03:18 So I am frying a brinjal in this.
03:20 And as you can see how evenly it's getting fried.

03:29 They can be a little heavier than the other pans and are generally a little more expensive
03:34 due to the layered construction.
03:36 Due to the even distribution of the heat, our brinjal is now cooked perfectly.
