Learn how to make Jackfruit Shami Kebab at home with our Chef Varun

Jackfruit Shami Kebab is a vegetarian twist on the traditional Shami Kebab, a popular Indian dish made with minced meat and spices. Instead of meat, jackfruit is used as the main ingredient in this recipe to create a similar texture and flavor.

Ingredients:
750 gms Raw Jackfruit (boiled & mashed)
1Onion (chopped)
¼ cup Fresh Mint Leaves (chopped)
¼ cup Fresh Coriander Leaves (chopped)
1 tbsp Ginger & Garlic (crushed)
1 tbsp Garam Masala Powder
1 tbsp Green Chillies (chopped)
1 tbsp Chilli Flakes
juice of 1 Lemon
Salt (as per taste)
Water (as required)
Oil (for shallow fry)

00:00Well, today I'm making one of the most stunning kebabs from India, of course.
00:04Known as Shami Kebab using Jackfruit.
00:08Now, what I'm doing is I'm using the core ingredient,
00:11which is a Raw Jackfruit.
00:13Now, if you remember, last summer, it's a summer fruit in India.
00:16A summer fruit, a summer vegetable.
00:18Last summer, I showed you an extensive video on how to process a Raw Jackfruit.
00:23And I also showed you a couple of recipes attached to it.
00:26I showed you Tandoori Jackfruit.
00:27I showed you a Jackfruit Biryani using a Raw Jackfruit.

00:36Make that, make this, make merry.
00:38Beginning with Raw Jackfruits, you take the boiled Jackfruit.
00:43And you mash it, you pulp it.
00:45You can run it into a grinder, into a blender.
00:48And then just get that mush out.
00:49So let's take that in a large bowl.
00:55Let's add in chopped Red Onions.
00:57Lots of them.
00:58Chopped Fresh Mint Leaves.
01:01Finely chopped Fresh Coriander Leaves.
01:03Crushed Ginger and Garlic.
01:05Homemade Garam Masala.
01:07Finely chopped Green Chillies.
01:09Chilli Flakes.
01:11Juice of 1 Lemon.
01:13Last but not the least, Salt.
01:15One thing which is very important to note here in this case,
01:18I'm not using cooked Bengal Gram,
01:20which otherwise is quite traditionally used while making Shami Kebab.
01:24Reason being, Raw Jackfruit has a lot of starch of its own.
01:28Now that starch of course helps in binding,
01:30it helps in, you know, just creating that wonderful mouthfeel,
01:33that otherwise Channa Dal would bring to the table.
01:35Let's mix all of this.
01:40Let's start shaping the Kebabs.
01:41For that of course, you need to dip your fingers into a little bit of water.
01:47Take lemon sized portions like so.
01:50Roll them and dab them.
01:52As simple as this can get.
01:55Let's similarly make some more.
02:02Kebabs are shaped and ready.
02:04At this point in time, oil in a pan, shallow fry.
02:09A couple of flips here and there and we're done.
02:11You can keep these in the deep freeze at this point in time,
02:13or you can half fry these.
02:15And serve it warm and fresh.
02:17As per your family requests.
02:19Let's begin frying.
02:20Deep fry the Kebabs till they are golden brown.
02:51With this, Jackfruit Shami Kebabs are done and ready.
