Così Manuel Ebner, chef del ristorante “1524” all’interno della tenuta Ansitz di Cornaiano (BZ), ha spiegato il suo modo di intendere la cucina durante l’ottava tappa del tour “SquisITA – L’Italia in un boccone”, promosso da Metro Italia dal 2022 in occasione del suo 50° anniversario. “Cerchiamo vecchi metodi, vecchi e ricette o prodotti dimenticati che però reinterpretiamo con lo stile di oggi”, ha aggiunto lo chef.
