00:00The local producers as the engine of the gastronomic excellence of the territories and of the sustainability strategy of Metro Italy,
00:12which in Cornaiano, in Alto Adige, celebrated the eighth stage of the Exquisite Tour, Italy in a bite,
00:19started in 2022 to celebrate the company's 50th anniversary.
00:24We are in Trentino, Alto Adige, a region rich in territorial excellences. Metro is here to promote them.
00:32Metro works in this territory with four points of sale, collaborates with more than 150 companies and provides 1,700 local products.
00:42In the framework of Chef Manuel Ebner's Ansitz-Runghoff firm,
00:46Metro Italy organized a comparison on the promotion of local gastronomic excellences,
00:52maintaining the link with the territory of origin and favoring the adoption by restaurateurs of excellent raw materials,
00:59a symbol of the local tradition.
01:01We try to find old methods of making, as was once done, old recipes, old products,
01:12forgotten products, products of the past that we try to rework in the present.
01:19During the debate, thanks to the testimony of some producers,
01:23there was talk of the criticism faced by the gastronomic sector,
01:27from the effects of climate change to the lack of staff,
01:31but also of how the synergy between producers, companies and institutions is able to look to the future without fear.
01:39Behind all this there is then the whole world of the production industry,
01:42therefore the whole productive part of these products,
01:45which transform what is a cultural tradition of attachment to the territory
01:49to what is then a very important market that employs thousands and tens of thousands of people.
