00:00A combination of tradition and innovation, this is the philosophy that led the realization of the guides of the Espresso 2025 presented at the Teatro Arcimboldi in Milan.
00:14At the presentation of the volumes, which this year celebrates its 45th anniversary and continues to be a point of irrefutable reference for lovers of the excellence of Italian food and wine,
00:25the star chefs Antonino Canavacciuolo, Chico Cerea and Massimo Bottura, as well as the director of Espresso, Emilio Carelli, were in the front row.
00:34The philosophy that inspired the writing of these new guides for the Espresso 2025 restaurants and wines was to combine tradition,
00:45therefore to value those that have been the excellences of the past that have been confirmed as such, but to look for both for the restaurants and for the wines,
00:56also those that are the novelties, to try to understand what the chefs of the future will be, to try to understand what are the canteens that in these months have distinguished themselves for novelty,
01:07for experimentation, for new tastes, and it is from this philosophy that the new guides were born, who therefore try to weld tradition with the future.
01:18Among the over 1,000 guests, also the Minister of Agriculture, Food Sovereignty and Forests, Francesco Lollobrigida.
01:25Guida means to have the opportunity to know what others have looked for, open roads that must be consolidated through information that people need to choose,
01:39and therefore to reach the places that discover in advance the contents and then savor, in this case, in the taste, in the environment,
01:50in the places to which our products are linked, in the restaurant, through what Italian cuisine means, as conviviality, as a precious heritage,
02:02which we are therefore candidating for UNESCO World Heritage.
02:06For President of Verona Fiera and Federico Briccolo, the guides of the Espresso have always been an important pillar of the promotion of the wines of the summer.
02:14The guide of the Espresso is always very much awaited by all wine lovers, who in recent years have certainly contributed to the growth of Italian wines, not only in our country, but also in the world.
02:27Italian wines have focused a lot on export, their quality, their excellence, linked to the value of Made in Italy,
02:35it really manages to enter all markets, all over the world, there is an excellence that is recognized by everyone, which is also linked to the food and therefore the whole food sector,
02:46where Italy excels and where even through the guides of the Espresso the best wines are selected, the best activities that deal with restaurant,
02:56this is certainly a great added value for the end user.
02:59Awarded as the best emerging chef, Chef Luigi Coppola of Casa Coloni explains the importance of recognition.
03:06The importance is that we understand that the direction is perhaps the right one, the direction of a team that works hard, a team that supports you,
03:17so you see a little light, you see that what you do begins to bear fruit.
