00:02 - I think since MasterChef,
00:10 I think coming from a community like Ballarat,
00:12 everyone got around me, which is nice,
00:15 and the support was really lovely.
00:17 And since starting Tim's Toasties,
00:19 just people coming, we call them Toasty Groupies,
00:22 but I've literally got people that come
00:23 to every single market, every event that I do,
00:26 and I'm just so grateful, 'cause without them,
00:28 I wouldn't have a business.
00:30 Just to see the growth in our hospitality,
00:36 cafe, restaurant industry,
00:37 we're really become a foodie scene.
00:40 Oh, our foodie scene has just gone
00:41 from strength to strength,
00:42 and we've become a foodie city in our own right,
00:45 and really up there with the best restaurants
00:48 and cafes that Melbourne has to offer now,
00:50 and we're a real destination.
00:52 Ballarat in 10 years, so it'd be 2033,
00:56 that's crazy to think, but the way time's going,
00:58 it won't take long at all,
01:00 but I think the city's just going to grow and grow and grow.
01:04 Obviously, our population's gonna grow,
01:06 but I just think, but I don't think,
01:10 we're not going to lose our sense of community,
01:12 I don't think, because I feel like as Ballarat community,
01:16 where we feel like we're all in this together,
01:19 and we all try and work together for the common goal,
01:21 just to make Ballarat Ballarat the best town it can be,
01:23 and I'm excited to see what Ballarat
01:26 is going to be like in 10 years,
01:28 and I'm gonna be right here, I'm not going anywhere.
