When it comes to breakfast, I prefer my meal to be simple and quick. And for me, eggs are stapled ingredients that are always in my kitchen.
I find that having an omelette that has the right texture and still soft in the centre is one perfect breakfast meal, especially when it is filled with delicious rendang meat and thick gravy.
As an Indonesian, I love to have my meals to be spicy, so if you don’t like spicy, feel free to omit the chilli.
This perfect omelette is also great to be eaten with rice, or just simply eat this alone. For the best flavour, use coconut oil when making this fluffy omelette.

This is how to make rendang omelette,
you’ll need :
2 garlic
3 shallots
3 eggs
1 lime leaf
1 big red chilli
1 bird's eye chilli
coconut oil
beef rendang
