There’s nothing quite like enjoying a popsicle on a hot day, but that pleasant experience can quickly become a messy one when the frozen treat begins to melt.

The secret of making the melt-resistant refreshers was discovered by accident when searching for a solution to another problem. 
Biotherapy Development Research Center in Kanazawa was looking for a way to use the strawberries grown in the region, as ever since the tsunami and earthquake of 2011 the fruit hasn’t been visually enticing and, as such, not fit for sale.
It was testing out possible dessert-making uses for polyphenol, which is extracted from strawberries, when it accidentally discovered that substance has solidifying powers. 
The team tested the ingredient in popsicles and, sure enough, it resulted in a frozen item that keeps its shape in high heat, including the intense blasts of a dryer.
Their longevity is not, of course, eternal, but the popsicles have been proven to hold steady for at least 5 minutes.
