Using Lemon and Lime

If you are using lemon for a vinaigrette and all you have are limes, I would go for vinegar. A good vinegar would be a basic white wine vinegar or balsamic. Now, if you were cutting an avocado, and you know how you need an acid to keep it from browning, you could use lemon or lime. If you were making salsa, and all you have were lemons I would use, I would go ahead and use the lemon instead of vinegar. Now, if you had a recipe for lemon bars and all you had were limes, I would make lime bars.
