You have probably noticed when you have been to the supermarket buying fruits that they are not always ripe. So you bring them home, and you are going to have to ripen them either by letting them sit out, or perhaps you could speed the process up a little bit. One of the tricks, especially with fruits like peaches or nectarines, is put them very simply in a paper bag. I have got some nectarines here. They are about a day away or two days away from where you would want to eat them. I just take a little lunch bag, in they go, and that is it. Now there are other fruits, such as strawberries, which are basically ripe when you buy them, so that is not a problem. Fruit can be kept in the refrigerator if you do not want to ripen them too soon, or if it is warm enough, just leave them out, even not in a paper bag. The paper bag captures and absorbs some of the humidity and moisture that the fruit itself generates. That increases the ripening process, allowing the sugars to really develop, which makes the fruit, of course, taste so good. Peaches, apricots and nectarines, for instance, really taste best not when they have a bite to them, but when they are soft and juicy. One of the things you should be looking for when you are buying fruit: a fruit that is pretty close to being ripe so you do not have to ripen them quicker, they will ripen on their own. So when you buy fruit, especially at the farmer's markets that may be near your house, those will be fruits that are very close to being ripe, but still, you are going to have to wait a day or two. I recommend that you plan ahead, and do not worry about quickening anything. Let nature take its course, and you will have your ripe fruit in two days.
