Aired (October 20, 2024): Hailing from Rizal, this dish is a true local favorite. In this episode, Chef JR Royol challenges himself to create his own version of ‘Kinulob na Bibe.’

00:00We'll be bonding again with farmer and vlogger Maki Moto.
00:05But before that, I'll make him cook some dishes that we'll be serving at his farm.
00:13There are a few dishes in Rizal that are very popular.
00:17Their bibi or itik dish, which is the kinulob.
00:21We can see that Sir Maki's itik are boiling here.
00:25Might as well, we'll make our own version of kinulob.
00:30We'll just add the balunan and of course, the garlic.
00:42The bay leaves or laurel.
00:45Optional, star anise.
00:48We'll also add the peppercorns.
00:51And the soy sauce.
00:53We'll also add the brown sugar.

01:00We'll just let it boil until the duck is tender.
01:04This would take us around 1.5 to 2 hours.
01:08And then we'll come back and deep fry it.
01:12It's perfect. The duck is now very tender.
01:15We'll set it aside to rest.
01:19At the same time, we'll also reduce the broth.
01:22We'll do the same so that it'll be absorbed by the rice later.
