00:12Then again, making a formidable cup of the world's most popular beverage takes a number of meticulous steps.
00:18Every barista worth his or her salt will say.
00:21Monique Touzon shows us the steps in serving a decent brew in this story.
00:30Coffee, such a simple yet complex everyday drink.
00:45But I bet you didn't know where your coffee came from.
00:48So let me show you.
01:00And I'm here in Amadeo Cavite, the coffee capital of the Philippines, to show you exactly how coffee is made.
01:07I'm here at Echo Farms today to learn the fundamentally complicated process of coffee making from seed to cup.
01:14These steps are the basics each and every barista should know.
01:18Giving me a tour and crash training is Dr. Alejandro C. Mojica, the director of the Philippine Coffee Board.
01:25The first step is to grow the coffee tree and let the fruit ripen.
01:29The next step is to pick the fruits during harvest time when the fruits are red like cherries.
01:34And harvest time normally occurs around December to February.
01:38So unfortunately, I wasn't able to experience harvesting the fruit.
01:42After harvesting, the seeds go through processing, dry or wash.
01:47Now we dry the seeds to a moisture of 11 to 10 percent.
01:50And there's an instrument called the moisture meter for this part.
01:54The fifth step is the milling process.
01:56This is the part where the outer covering is removed.
02:00And my favorite part, the sorting of the beans.
02:03I found this to be therapeutic and enjoyed the coffee sorters company.
02:07From the farm to beans now go through the roasting process.
02:11After roasting, the tasty part begins, brewing the coffee.
02:15Now there are many different ways of brewing, but for this segment, we'll show you two.
02:20Pour over and espresso.
02:22I sat down with Chitwan, who is the president of the Philippine Coffee Board,
02:26to talk about what makes Philippine coffee so special.
02:30Well, I think it's the fact that we have all four varieties.
02:34So that makes us special already because not many countries can claim, you know, having four varieties.
02:41And then second, we are a coffee drinking nation.
02:44So we're serious about our coffee.
02:46We're serious, but we're fun.
02:48I think a lot of countries that produce coffee, their problem is domestic consumption,
02:54which has never been our problem.
02:57And so because we're coffee drinkers, we can drink coffee anytime.
03:04And we are very discerning about the coffee quality.
03:09So that makes us very special.
03:11I also spoke to Commune coffee owner, Ros Juan, who enlightened me about the misconceptions of Philippine coffee.
03:18I think one thing is that barako is so ingrained in our culture,
03:24that when you say Philippine coffee, people instantly think of barako.
03:29So I think one misconception is that all the coffee in the Philippines is barako.
03:34It's not.
03:36Another misconception is, I guess it's the same, that we only grow barako here in the Philippines.
03:44I guess another one is that a lot of people don't know that about 80-85% of our coffee production is really Romista.
03:56And another misconception is that all the coffee in the Philippines comes from Cavite and Patangas.
04:02And maybe one trivia is that our largest producer of coffee in the Philippines,
04:08and they produce a lot of Robustas, is actually Sultan Kudarat.
04:12Now that we learned a little bit about coffee, I asked how people like to drink coffee.
04:17Hi, I like the piccolo latte because it strengthens me.
04:21My favorite coffee is, I study with milk, it's a bestseller of Commune coffee.
