00:00My passion in life is tattoos, having an idea, an experience, a moment, a memory of someone
00:06that I will always have on my skin, or an emotion on a plate.
00:10For me, it's this, the way I express what I want to communicate to people at that moment,
00:15or what I would like to keep forever as a beautiful memory.
00:20The only canvas we're going to keep forever. I love that.
00:25There are moments of memory, of experience, what you want to feel when you see the tattoo,
00:30or what you want your client to feel when they try this dish.
00:33I have approximately 40 tattoos, but the one I enjoy seeing the most is a sacred heart
00:39that I have in allusion to my grandmother, because it was an image that I saw a lot at home.
00:44We are going to make some Josefina gorditas, she is my grandmother,
00:48to whom I always remember with a lot of affection.
00:51The people who have inspired me the most in the kitchen are two gorditas, as the name suggests,
00:56of Creole corn, one is yellow corn and the other is black corn,
01:00stuffed with egg with beans, a little Serrano pepper, Oaxaca cheese,
01:04covered with sour cream, chiapas cheese, and a little cilantro and pickled onion.
01:09Super delicious. Both this tattoo and those gorditas are a memory of her
01:13and a tribute, especially for her person.
