En Voraz, su gastro-cantina en la CDMX, siempre busca reflejar esta filosofía en platos como el Pescado de Taller, donde pocos elementos logran un gran impacto, similar a la música.

Como dato extra, queremos mencionar que la canción que escuchas al fondo es una creación del chef, llamada “EN TELEVISIÓN”

00:00Speaking of music in particular, I love it and I'm passionate about it because it's a medium in which you get lost when you do it.
00:11So in a state of meditation and of flowing, I start writing music or songs rather, letters, or listening to music but in a kind of orderly way,
00:22to see what references I can use. It's a moment of exploration and total freedom to do whatever I want.
00:33After this moment of creativity, I go to one of the restaurants, depending on what I have to do during the day.
00:42Here we are in Boraz. Boraz is my last project in Mexico City and it's like my baby, where we make Mexican food and it's very focused on drinking, it's a gastrocantina.
00:55Right now we are going to make a dish called Cascado de Taller, which is a very minimal dish but at the same time it has a lot of flavor and for me it has that similar thing with my music.
01:04I try to make it with a few elements but with a lot of punch and presence.
01:10And then the second part, which is super impressive, is when you share it and share what you did and see the reaction of the people and connect with them in a way that is beyond words,
01:22of intellect, it's like in an emotional way, without knowing the person and it's a kind of magical thing.
