00:00 I started to like skating because in the 80s, when I was young,
00:04 roller boogie was very popular.
00:07 You could go out and skate, and you could use the skating tracks.
00:11 There was one near my house where I loved to skate,
00:15 but it was also great because there were mirror balloons,
00:18 there was music, and you could skate.
00:21 Suddenly, the guy you liked would hold your hand
00:24 and go for a spin with you.
00:26 It was great.
00:27 My favorite hobby is going out to skate on Sundays to Reforma.
00:31 I love it because I get this feeling of freedom.
00:35 It's also a democratic space where we can all live together,
00:39 all of us from Mexico City, in a common way, in harmony.
00:44 Feeling the air on your face,
00:46 that concept of freedom that I feel when I skate,
00:49 and the Mexican-ness that I capture in my gastronomic proposal.
00:54 I connect it because at the end of the day, we are a free, democratic country,
00:58 free of expression, regardless of what may happen.
01:02 Mexico is for Mexicans.
01:04 The dish we are going to make identifies us as Mexicans
01:07 because it has corn, beans, and chili.
01:09 This soup with the beans, fiesta, cottage cheese,
01:13 and the fresh quelites salad.
01:15 Simplicity has a great power,
01:17 so we are going to represent it in this dish.
01:20 The "less is more," the culinary heritage of our Mexico,
01:23 the "Let's make it a country," and the freedom that identifies us
01:26 and characterizes us as Mexicans.
