00:14 Today we will make a dish called Aloo Baingan ki Sabzi
00:19 Baingan is very good for diabetes. We will use potatoes but in very less quantity
00:24 So lets make Aloo Baingan ki Sabzi

00:37 To make this dish we have taken one big stuffed baingan
00:45 We have cut it into big pieces and washed it well and soaked it in water
00:55 We have soaked it in water because if we leave it open it will turn black
01:01 We have taken 2 peeled and cut potatoes and soaked them in water
01:09 We have turned on the gas and put 2 cups of water in the pan to heat it
01:16 Now we will add the diced potatoes
01:22 We have removed the water from the potatoes. We will add 1 tsp salt and 1/2 tsp turmeric
01:28 We will boil the potatoes in medium flame
01:33 We have boiled the potatoes for 10 minutes
01:38 We have checked it with a fork and it is boiled well
01:43 We will turn off the gas and take out the boiled potatoes in a bowl
01:49 We will put 2 tbsp oil in the pan
01:53 The oil is hot now. We will put 1 tsp cumin seeds, 1/2 tsp asafoetida, 1 inch chopped ginger
02:05 We have crushed 8-10 garlic cloves and chopped green chillies
02:12 We will fry it till the raw smell of garlic goes
02:17 We have fried the garlic and ginger for 2 minutes
02:29 We will put 1 finely chopped onion and fry it till it turns golden brown in low flame
02:41 We have fried the onion for 5 minutes and it has turned golden brown
02:49 Now we will add the remaining spices
02:52 1 tsp coriander powder, 1 tsp turmeric, 1 tsp red chilli powder, 1 tsp chaat masala, 1 tbsp salt
03:09 Mix it well
03:12 We will fry it for 2 minutes
03:19 Now we will add the chopped brinjal pieces. We have separated the water from it
03:35 We will fry it for 8-10 minutes
03:44 We have fried it for 5 minutes in medium flame and it is half cooked
03:52 Now we will add 2 chopped tomatoes. We will cook it till the tomatoes become soft
04:01 We have cooked it for 5 minutes and the tomatoes have become soft
04:11 Now we will add the boiled potatoes. Mix it well and fry it for 2 minutes
04:23 Now we will add the chopped coriander
04:31 Our aloo bengal sabzi is ready. We will turn off the flame and serve it in a bowl
04:37 Our diabetic friendly aloo bengal sabzi is ready
04:42 We have served it with multi grain roti, dal, salad and buttermilk
