00:08Today's recipe is Set Dosa, also known as Sponge Dosa.
00:12As the name suggests, it is very spongy and soft.
00:15We can eat it with chutney or sambar.
00:17But the speciality of it is that it still remains very soft and spongy even after 4-5 hours of cooking.
00:24So we can take it as a tiffin and it tastes just as good.
00:28Dosa is a universal favourite.
00:33Some people like idli or dosa more than idli,
00:37because it has oil or ghee in it and is fried.
00:41So dosa is a universal favourite to everyone.
00:44Today's recipe is Set Dosa or Sponge Dosa.

01:00To make Sponge Dosa or Set Dosa, we will take 2 cups of idli rice in a bowl.
01:09Half cup urad dal.
01:14Half teaspoon fenugreek seeds.
01:16Half cup chana dal.
01:20We will wash all these 2-3 times with water.
01:32We have washed idli rice, urad dal and fenugreek seeds 2-3 times with water.
01:41We will add water to it.
01:47We will cover it and soak it in water for 5-6 hours.
01:55It's been 6 hours. We will remove the lid.
01:58Our idli rice, urad dal and fenugreek seeds are soaked well.
02:04We will remove the water from it.
02:10We have separated the water.
02:12We will put it in a mixer jar or a wet grinder and make a smooth paste of it.
02:19Till we grind idli rice, urad dal and fenugreek seeds, we will take 1 cup of poha in a bowl.
02:30We will wash it 2-3 times with water.
02:42We have washed idli rice, urad dal and fenugreek seeds 2-3 times with water.
02:46We will add water to it.
02:50We will soak it for 10 minutes.
02:56It's been 10 minutes.
02:58Our idli rice is soaked well. It has become soft.
03:07We will put it in a wet grinder and make a fine paste of it.
03:13We will squeeze the water and put it in a wet grinder.
03:19We have added soaked rice, urad dal and fenugreek seeds to the wet grinder.
03:27Now we will add soaked poha to it.
03:31As I always say, there is an advantage of a wet grinder.
03:34We can grind a lot of quantity at a time.
03:38We will add 1 cup of water to it.
03:45We have covered the wet grinder.
03:50Now we will grind it.
04:07Our batter is ready for set dosa or sponge dosa.
04:22We will cover it and keep it to ferment for 8 hours.
04:29It's been 8 hours. We will remove the lid.
04:33Our batter has fermented well.
04:37We will mix it.
04:43To make dosa, we will take some batter in another bowl.
04:47We will take as much as we need.
04:51We will cover the rest of the batter and keep it aside.
04:55We will add 1 cup of water to the batter.
04:58We will add 1 tsp of salt.
05:08Here we are using rock salt.
05:10You can also use normal salt.
05:17We will mix it.
05:29We have turned on the gas.
05:32We have kept a dosa pan to heat.
05:37The pan is heated.
05:39We will add 1 tsp of oil to it.
05:42We will wipe it with a tissue.
05:50Before making dosa, we will mix the batter once.
05:59We will add 2 ladles of batter to it.
06:11We will spread it lightly.
06:15We will not make it too thin.
06:17Set dosa should be thick.
06:24We will cover it.
06:27We will cook it in low flame.
06:31We will remove the lid after 2 minutes.
06:35We will add oil to the top.
06:50We will flip it to the other side.
06:56We will add oil to it.
07:03We will cover it and cook it for 2 minutes.
07:08We will remove the lid after 2 minutes.
07:14Our soft and fluffy set dosa is ready.
07:20We will take it out in a plate.
07:23We will make all the set dosas in the same way.
07:29Our set dosa or sponge dosa is ready.
07:32It is soft like a sponge.
07:35That is why it is called set dosa or sponge dosa.
07:38We have served it with coconut, mango chutney and sambar.
