00:00 Welcome to Vegglass Cooking.
00:07 Today I am thinking of making something sweet.
00:14 But what should be made in sweet?
00:21 We make kheer in sweet.
00:24 But not the regular rice kheer.
00:26 We will make kheer a little different.
00:28 We make makhane ki kheer.
00:30 So what all ingredients are required for makhane ki kheer?
00:33 I have ghee, makhane, sugar, fresh cream, nutmeg and cardamom.
00:42 We are giving it a flavor.
00:44 You can give it any flavor you like.
00:46 You can add kewra water or rose water.
00:50 Or you can make it without any flavor.
00:54 I have some chopped almonds.
00:57 We will garnish it with this.
00:59 I have milk.
01:00 The method of making kheer is very simple.
01:02 First of all we have to roast the makhane in ghee.
01:06 I have ghee.
01:08 Add as much as you like.
01:13 I have added 4 spoons.
01:15 Let it heat up a little.
01:17 Spread it.
01:19 We have to roast the makhane on low flame.
01:24 If you roast it on high flame, it will be raw from inside.
01:28 We have added the makhane.
01:30 Stir it and roast it till it gets a little aroma.
01:36 So that it gets a crispness.
01:39 Earlier it was white in color.
01:41 Now it is of white color.
01:43 Which means makhane are cooked.
01:45 Another way to cook it is,
01:47 If you press it, you will get a crunch feel.
01:50 It will not be soggy.
01:52 Now we have to grind it.
01:54 Take a grinder and put the makhane in it.
01:59 Before grinding it, let it cool down.
02:06 Till then, in the same pan,
02:09 Add milk.
02:10 This is full cream milk.
02:12 Add it in it.
02:14 This is about 750 ml milk.
02:17 Let the milk boil.
02:19 Milk is boiling.
02:20 Let's see the makhane.
02:21 Makhane have cooled down.
02:23 Let's grind it.
02:25 We have grinded the makhane coarsely.
02:34 We have to reduce the milk a little.
02:37 If you don't want it to be too rich,
02:40 You can use toned milk or double toned milk.
02:44 Milk has boiled well.
02:46 Now what we have to do is,
02:48 Add the makhane in it.
02:54 Mix it well.
03:01 After this,
03:03 Cook it on low flame till it gets a little consistency.
03:09 Stirring continuously.
03:12 We will cook it for about 5 minutes.
03:16 Milk has been cooking for 2-3 minutes.
03:20 Now what we have to do is,
03:22 Add some freshly grated nutmeg in it.
03:28 Add a little.
03:30 This is about 1/4th teaspoon of nutmeg.
03:33 Add cardamom as an additional flavor.
03:40 In the middle of cardamom.
03:42 Now what we have to do is,
03:46 Add sugar as per your taste.
03:52 Stir it for 2 minutes and cook it.
03:56 You can see that the kheer has become thick.
03:59 We need the consistency we wanted.
04:01 Add fresh cream to give it more richness.
04:06 Mix it well.
04:12 Add some almonds for garnishing.
04:18 If you don't want to add dry fruits in makhani kheer, then don't add.
04:22 If you want to add, then you can add raisins, pistachios, almonds, cashews.
04:28 Now what we have to do is,
04:30 Serve the bun.
04:36 We have served the kheer.
04:38 Now add some almonds.
04:42 So the very tasty makhani kheer is ready.
04:46 Do try it. It is a very simple recipe.
