Recipe to prepare "Achaari Masala":

Ingredients:
4 tbsp fennel seeds
3 tbsp coriander seeds
1-1/2 tbsp fenugreek seeds
1 tbsp cumin seeds
1 tbsp onion seeds/kalaunji
1/2 tsp black salt
8 tbsp mustard oil
1/2 tsp asafoetida
1/2 tsp turmeric powder
1/2 tsp red chilli powder
8 tbsp yellow mustard
1 tsp salt

Method:
Turn on the gas on low flame.
Add fennel seeds; stir and dry-roast for around 30 seconds.
Add coriander seeds and fenugreek seeds; mix well and toss.
Add cumin seeds and onion seeds; stir and dry-roast on low flame, until the spices give out fragrance and their color changes.
Cook for 2-3 minutes, and keep on tossing in between to let the spices cook evenly.
Let the spices cool to room temperature, and grind coarsely in a mixer/grinder.
Add black salt, and grind again.
Heat oil in a pan.
Put off the flame, and let oil cool a little.
Add asafoetida, turmeric powder and red chilli powder; mix well.
Add the ground spices, and mix well.
Add mustard, and mix well.
Add salt, and mix again.
Achari Masala is ready.

Achari masala is used to make pickles.

00:29 For this, we need some ingredients.
00:33 First, we need Mustard Seeds.
00:36 We call it as "Rai" in Hindi.
00:37 We need yellow Mustard Seeds for Pickle.
00:40 We will also need Cumin Seeds.
00:42 Fenugreek Seeds.
00:44 Coriander Seeds.
00:47 Fennel Seeds.
00:48 Clove Seeds or Onion Seeds.
00:50 Red Chilli Powder.
00:52 Black Salt.
00:53 Turmeric Powder.
00:54 Salt.
00:55 Asafoetida.
00:58 And the most important ingredient is Mustard Oil.

01:11 Dry roast all the spices on low flame.

01:28 First, we will add Fenugreek Seeds.
01:34 We will add about 4 spoons of Fenugreek Seeds.
01:40 Let it roast for 30 seconds.
01:49 Then, we will add 3 spoons of Coriander Seeds.
01:56 Keep the ratio of Fenugreek Seeds to Coriander Seeds.

05:35 Now, we will mix it well.
05:39 Make sure that you don't dry roast the Mustard Seeds.
05:43 Dry roast the remaining spices.
05:45 After mixing the Mustard Seeds,
05:47 we will add Salt.
05:49 Make sure that you have added Black Salt as well.
05:51 Add Salt as per your taste.
05:53 Add 1 spoon of Salt.
05:57 Mix it well.
06:00 Your Pickle Masala is ready.
06:03 You can add any Pickle you want.

06:07 Add some more Mustard Oil in the burner.
