00:07 Today we are going to make Kolhapuri Ragda Masala.
00:14 Ragda is yellow peas which is soaked and boiled overnight.
00:18 In Delhi it is called yellow peas and in Maharashtra it is called Ragda.
00:22 So we have soaked and boiled it overnight.
00:25 Now we will make Kolhapuri Ragda Masala.
00:28 For this, first of all, turn on the gas.
00:31 After this, add 1 to 1.5 spoons of oil.
00:38 As soon as the oil is heated, spread it.
00:45 Always spread it evenly all around.
00:48 Add cumin seeds.
00:50 Approximately 1 spoon of cumin seeds.
00:54 Cumin seeds are getting crackled.
01:00 As soon as cumin seeds start crackling, add green chillies.
01:03 Kolhapuri cuisine is quite spicy.
01:09 That's why we use green chillies and red chillies.
01:13 Add some garlic.
01:16 Approximately 1 clove.
01:18 Cook it.
01:20 Now add curry leaves.
01:25 Curry leaves are an important ingredient of Maharashtrian and South Indian dishes.
01:31 It will give a very good flavor to the dish.
01:34 Now add approximately half an onion.
01:48 Cook it a little.
01:52 Do not brown it.
01:54 Cook it till it turns transparent.
01:57 Now add dry spices.
02:01 Add 1 pinch of turmeric powder.
02:07 Add it in a very small quantity.
02:09 Just to give color.
02:12 This is turmeric powder.
02:14 Actually, we use Kolhapuri red chillies which are quite spicy.
02:19 But we are using Kashmiri red chillies which will give color and less spiciness.
02:25 Cook it a little.
02:32 As soon as it is cooked, lower the flame.
02:35 Add dry ginger.
02:37 Do not let the chillies burn.
02:39 Add the onions.
02:41 A little more.
02:57 Now add the garam masala which we prepared earlier.
03:06 It is used in many of our recipes.
03:10 This will give a very different flavor to the dish.
03:14 Add approximately 1 teaspoon.
03:17 Lower the flame again.
03:20 After adding the garam masala, add water.
03:26 Cook it well.
03:31 The butter is cooked, just mix all the spices well.
03:36 Cook it.
03:38 It is starting to boil, cook it for 1 minute.
03:47 As we added water, the quantity of salt will be less.
03:52 So add a little salt.
03:55 Salt.
03:57 Salt is in it.
04:04 The flame is high.
04:06 Now we will add a little coriander leaves for garnishing.
04:12 And your Kolhapuri Ragda Masala is ready.
04:17 We have served the Ragda Masala, let's garnish it.
