1 Green Capsicum (diced)
1 tsp Gram Flour
½ cup Curd
Water
½ cup Cauliflower (steamed)
1 Carrot (diced & steamed)
1 cup French Beans (steamed)
½ cup Green Peas (steamed)
100 gms Paneer (cubes)
Salt (as per taste)

2 pinches Sugar

00:02 Let's see the recipe for 'Achari Mix Veg'.
00:05 I'm going to start with making the gravy base for this.
00:08 So let's start with heating 1 tbsp of Oil.
00:11 Add in 1 Onion, finely chopped.
00:13 Cook the Onions till they are nice and brown.
00:20 2 tbsp of Garlic, finely chopped.
00:23 2 tbsp of Ginger, finely chopped.
00:28 Once the Onions are brown, add in 1 Tomato, finely chopped.
00:32 While the Onion-Tomato mixture is cooling down,
00:38 let's mix in a few ingredients in the blender.
00:41 1 tsp of Kashmiri Red Chilli Powder.
00:44 1/2 a tsp of Garam Masala Powder.
00:47 1/2 a tsp of Coriander-Cumin Seed Powder.
00:50 1 tsp of Fennel Seed Powder.
00:54 2 tbsp of Mango Pickle.
00:57 Add in the Mangoes as well.
00:59 Let's add in this mixture.
01:01 Grind this into a smooth paste.
01:04 The paste is ready.
01:06 And now we're going to start making the gravy.
01:08 In the same pan, heat up a tbsp of Oil.
01:11 Once the Oil is nice and hot,
01:13 into this, I'm going to add in 1 Capsicum, diced.
01:16 Cook the Capsicum pieces for a minute.
01:23 Next, add in 1 tsp of Gram Flour.
01:27 Roast the Gram Flour on low heat for a minute.
01:33 Next, let's add in the Onion and Pickle paste.
01:36 Cook the paste for a minute.
01:39 Next, add in 1/2 a cup of Curd.
01:43 Make sure you stir vigorously so that the Curd doesn't curdle.
01:51 Water to bring it to a gravy consistency.
01:55 Add in 1/2 a cup of Steamed Cauliflower.
01:59 1 Carrot, diced and steamed.
02:02 1 cup French Beans, steamed.
02:05 1/2 a cup of Steamed Green Peas.
02:07 100 gms of Paneer, diced into small cubes.
02:11 Add in Easy Salt.
02:13 1 tbsp of Kasuri Methi.
02:16 Give this a good mix.
02:21 Let the gravy cook for 2 minutes.
02:26 Add in 2 pinches of Sugar, Coriander Leaves and give this a final stir.
