00:00 Evenings are best enjoyed with something warm,
00:02 crispy and masala-y.
00:04 Today I'm making a cheesy masala puri.
00:07 Let's see how to make it.
00:09 I'm going to start with one cup of whole wheat flour.
00:12 To this, I'm going to add some hot oil.
00:14 Three tablespoons should be good enough.
00:17 And mix the oil around.
00:21 When you add oil to a puri dough,
00:25 it ensures crispy puris.
00:27 Now to this, I'm going to add two tablespoons of semolina,
00:31 some mixed herbs or pizza seasoning,
00:33 one teaspoon of red chili flakes.
00:36 You can add more if you like it spicy.
00:38 Next, I'm adding in one teaspoon of chopped garlic.
00:41 Next, I'm adding in some finely chopped dhania,
00:44 around one tablespoon.
00:46 Two cubes of processed cheese that have been grated.
00:49 I'm going to add a tiny pinch of salt.
00:51 I'm adding very little salt
00:53 because the cheese itself is quite salty
00:55 and the pizza seasoning also has a little bit of salt in it.
00:59 Now once you mix this around,
01:01 mash all the grated cheese into the flour.
01:05 And now we're going to make a dough with very little water.
01:08 Add only one or two tablespoons at a time.
01:11 The dough is almost ready.
01:20 All I need is half a tablespoon of water.
01:24 (upbeat music)
01:26 It should be a little harder than your chapati dough,
01:32 but softer than a puri dough.
01:33 Basically, I'm trying to get rid of all the cracks.
01:47 Let's have a look at the dough.
01:53 After 10 minutes, it's time to fry the puris.
01:57 We're going to portion it out.
01:59 I'm dividing the dough into two parts.
02:02 I'm going to turn one part into a log.
02:05 And now we're going to portion the log into small discs.
02:12 This will ensure that all the puris are similar in size.
02:23 And now we're going to start making the puris.
02:25 Turn each portion into a disc and roll it.
02:33 Once the puri is rolled out,
02:41 it should be not too thin, not too thick.
02:44 You can roll out a lot of puris all together
02:47 and set it aside so that frying becomes super easy.
02:51 (upbeat music)
02:53 Fry the puris in some hot oil.
03:05 (oil sizzling)
03:07 Only after growing up is when I understand
03:32 why my mom used to smile every time a puri
03:34 fluffed up very nicely in the oil.
03:37 I'm going to try this right now with some hot tea.
03:40 You too go try this recipe out
03:42 and let me know how it turns out.
