Ingredients:
1 cup Sour Curd
1½ cups Water
Salt (as per taste)
¼ tsp Turmeric Powder
1 tsp Ginger & Chilli Paste
1 cup Gram Flour
A few drops of Oil
100 gms Cheese
Dry Garlic Chutney
1½ tbsp Oil
1 tbsp Mustard Seeds
10-12 Curry Leaves
¼ tsp Asafoetida
Coriander Leaves (chopped)
Coconut (grated)

00:00 They say everything tastes good with Cheese.
00:02 So today I'm going to give a modern twist to a good old Gujarati snack, Khandvi.
00:06 So let's see the recipe for Cheese Stuffed Khandvi.
00:09 So I have 1 cup of Curd here, if you have Sour Curd that's preferred.
00:14 Now into this, I'm going to add in 1 and 1/2 cups of Water.
00:18 And whisk it.
00:19 Also, let's add in Salt.
00:27 Since this is a Cheese Stuffed Khandvi, go a little easy on Salt.
00:30 1/4 tsp of Turmeric Powder.
00:33 1 tsp of Ginger and Chilli Paste.
00:37 Let's mix all these ingredients to make a spiced Buttermilk.
00:41 Make sure there are no lumps of the Curd.
00:44 Let's slowly add this mixture into 1 cup of Gram Flour.
00:49 Whisk it.
00:52 Make sure there are no lumps.
00:54 And whisk it again.
00:55 Also let's add in a few drops of Oil.
01:03 And mix it well.
01:07 Let's pour this mixture in a steel bowl.
01:14 And now I'm going to pressure cook this for 6 whistles on high flame.
01:22 Place a lid over it, but if you feel that it's not going to overflow,
01:25 then just leave it open.
01:26 Cover it with a pressure cooker lid.
01:29 This was the last whistle.
01:37 And make sure you open the pressure cooker immediately.
01:41 Because we need to cook the batter a little more.
01:44 Make sure you let all the steam out.
01:51 And then only open the pressure cooker.
01:53 The batter is nicely cooked.
01:56 Remove the pot.
01:57 And I'm going to cook this directly on the flame for another 2 minutes.
02:03 But before you turn on the flame, make sure you give it a good stir.
02:08 Break all the lumps.
02:10 Turn on the flame.
02:16 And keep stirring vigorously.
02:19 Make sure it doesn't stick at the bottom.
02:22 And just cook it on the flame for 2 minutes.
02:26 It should be ready.
02:30 And now let's remove this directly over the kitchen counter.
02:34 You do not need to grease your kitchen counter.
02:38 Just clean it up properly.
02:40 And very quickly start spreading the batter
02:47 with any kind of a flat spatula into thin sheets.
02:52 Make sure you do this while it's hot.
02:55 While it's hot, quickly grate the Cheese.
03:03 So that it melts slightly.
03:05 Generously sprinkle the Garlic Vada Pav Chutney.
03:14 Let's make a few cuts.
03:16 Use the blunt side of the knife.
03:19 Let it cool down for 5 minutes before we start rolling them.
03:25 Very slowly just gather the edge and start rolling it.
03:42 Let's cut them into 1 inch pieces.
03:47 Time to make the Tadka now.
03:52 For that, heat about a table and a half of Oil in a pan.
03:57 Add in a tbsp of Mustard Seeds and let them splutter.
04:03 A few Curry Leaves.
04:05 1/4 tsp of Asafoetida.
04:08 Pour the Tadka over the Khandvi pieces.
04:12 Garnish with some Coriander Leaves and some freshly grated Coconut.
