Namak para, also known as nimki or nimkin is a crunchy savory snack eaten in the Indian Subcontinent. It is also referred to as Matar or Matrii sometimes in some parts of Punjab. Namak para is ribbon-like strips delicately seasoned with cumin seeds in pure ghee. It is a quite simple yet tasty recipe which can be as first thing in the morning with hot chai.
Ingredients:
(Serves 2)
- 1 cup All-Purpose Flour
- 1/2 tsp Salt
- 1 tsp Carom Seeds
- 2 tsp Ghee
- Water
- Oil
Method:
1. Take all-purpose flour in a large bowl and add salt, hand-crushed carom seeds, ghee and mix it
2. Start adding little water to it, and make sure the dough made should be a little hard
3. Cover the dough in the bowl with a plate for 10-15 minutes
4. Now, start rolling the dough really thin and cut it straight forming a long vertical strips
5. Fry them over a low flame in an oil-filled pan till they turn light brown
