Ingredients:
Makhani Gravy / Orange Gravy
2 tbsp Oil
500 gms tomatoes chopped
100 gms roughly cut onions
1 tbsp garlic chopped
50 gms cashew Nuts
1 tsp Kasuri methi
1/2 tsp garam masala
2 tbsp sugar
2 tbsp Kashmiri chili powder
5 tbsp butter
3 tbsp cream
2 tbsp White Vinegar
Salt to taste
Water
White Gravy
1 cup onions chopped
1/2 cup Boiled cashew paste
1/4 cup Oil
1 tbsp Garlic paste
2 nos Green cardamom
1 Green chilies slit into 2
1/4 cup Dahi whisked
1 tbsp sugar
1 tsp refined flour
1/2 tsp White pepper powder
2 nos Bay leaves
Salt to taste
Yellow Gravy
2 nos green cardamom
1 cup onions
1/4 cup Curds
1/2 tsp Chilli powder
1/4 tsp garam masala
1 tsp Coriander powder
1/8 cup Tomatoes
1 no. Bayleaf
1/8 cup Cashewnuts
1/2 tsp Turmeric powder
Salt to taste.
1/4 cup Oil
1 tbsp Ginger garlic crushed
Method: Lets first making Orange / Makhani Gravy for which heat up the Oil, then add Onions (chopped), Garlic, Tomato (chopped), Cashew Nuts. Stir all the mix on high flame, then add Salt, then cook it for 5 to 6 minutes. Once the tomatoes become softer then add the Cream, Kashmiri chili powder, Garam masala, Kasuri methi, Sugar and finally Butter. Now mix it together and add Water then White Vinegar, mix it again. Now let it cook for 20 minutes with lid closed on Medium flame.
Now as the Makhani/ Orange gravy is cooking let's make White Gravy for which start with heating up the Oil in the Pan and then add Bay Leaves, Green Cardamom, Onion (chopped), Cashew Nuts.
Fry it for few minutes and then add Pods of Garlic, Green Chilli, White Peppercorns, stir it for few minutes then add Slurry using Curd & Cornflour (as shown in the video), now put Salt & Sugar. Finally, add in the Water and cover it or open cook it on high flame for 15 to 20 minutes. Do not forget to stir in between so that it doesn't stick in the bottom.
Now as both are cooking let's make Yellow gravy for which start with heating up the Oil, then add Bay Leaves, Green Cardamom, Onion (chopped) and Salt let it cook till the onions are in golden color, Then add Ginger & Garlic Pods, Cashew Nuts let it fry for few minutes. Now add Tomato (chopped), Kashmiri chili powder, Turmeric powder, Garam masala, Coriander Seed Powder, mix it properly for 3 to 4 minutes then add Yogurt mix it again and then pour some water (as shown in the video). Let it cook for 5 minutes on high flame.
