Aalu Chutney Pulao
Ingredients for Chutney:

Coriander leaves 1 bunch
Mint leaves 1 bunch
Chopped tomato 1 medium
Fennel seeds 1 tsp
Cumin seeds 1 tsp
Dried pomegranate seeds ½ tbsp
Dried mango powder 1 tsp
Lemon juice 2 tbsp
Chopped green chilies 8
Salt to taste
Ginger garlic 1 tbsp
Yogurt 4 tbsp

Other Ingredients:
Potatoes (boiled& peeled) 500 gm small
Oil ½ cup
Rice 500 gm
Cinnamon 1 piece
Bay leaf 1
Green cardamom 3 pods
Cloves 3
Salt 1-1/2 tsp
Sliced fried onions 3
Chopped mint leaves 2 tbsp
Chopped coriander leaves 2 tbsp
Saffron water 1 tbsp
Lemon slices of 1lemon
Green chilies 4

Method:
Blend all ingredients of chutney. Fry potatoes in oil. Heat oil add whole all spices, chutney and cook. Then add potatoes and half fried onions. Now add water for rice with salt and cook rice. Add green chilies, lemon, fried onion, saffron water and let it simmer. Add coriander and mint leaves and serve.

Mutton Potato Kofta Curry:

Ingredients for kofta:
Potatoes (boiled & mashed) 500 gm
Semolina 2 tbsp
Flour 2 tbsp
Salt to taste
All spice powder 1tsp
Black pepper powder 1tsp
Chopped green chilies 3-4
Egg 1
Mint leaves 1tbsp
Oil for fry

For gravy:
Mutton 750gm
Brown onions 4
Ginger garlic 1tbsp
Tomatoes 250gm
Salt to taste
Red chilies 1 tbsp
Turmeric 1 tsp
Coriander powder 1-1/2 tbsp
Crushed cumin 1 tbsp
Yogurt ½ cup
All spice powder 1tbsp
Fresh coriander to garnish

Method:
Mix all ingredients of kofta and make balls. Then fry them in oil. Now heat oil for gravy add mutton, ginger garlic and cook well to tender meat. Then blend tomatoes, yogurt and brown onion. Add this blended mixture, salt and powdered spices to mutton and cook. When meat gets tender then add 1 cup water, koftay and let it simmer. Now add all spice powder, fresh coriander and serve.
