Gujrati Dahi Karhi:
Ingredients
Yogurt ½ kg
Gram flour ½ cup
Green chilies 6
Ginger 1tsp
Sugar or jaggery 1tbsp
Salt 1tsp
Cumin 1tsp
Mustard 1tsp
Asafetida pinch
Fennel ½ tsp
Fenugreek 1tsp
Red chili 2tsp
Curry leaves 6
Dried red chilies 6
Coriander as required
Oil ½ cup
Turmeric 1tsp
Method
In a bowl mix gram flour, yogurt, green chilies, red chili powder , salt , turmeric, sugar or jaggery and finely chopped ginger . now heat 2 tbsp oil and fry cumin mustard , fenugreek and fennel , now add the yogurt mixture with 4 cup of water and let it cook .when it become thick temper it with Asafetida, curry leaf , dried red chili . lastly sprinkle coriander and serve.
Jheenga Pulao:
Ingredients
Prawns ½ kg
Potatoes ½ kg
Tomatoes 2
Curry leaves 6
Rice ½ kg
Whole spice 1tbsp
Mint 1bunch
Onion 1
Ginger garlic 1tbsp
Green chilies 10-12
Oil ½ cup
Fennel 1tsp
Coriander 1tsp
Star anise ½ tsp
Salt 1tsp
Method
Heat oil fry onions , now add ginger garlic and whole spice , now add prawns , potatoes , tomatoes, green chilies , salt and curry leaves and roast .now add 2 cup water when prawns tender then add soaked rice, simmer it, lastly sprinkle mint , star anise, fennel seeds and coriander and serve.
