Recipe to prepare "Shaahi Gatte"; a dish from the Royal cuisine of India:
Ingredients:
1. bengal gram flour (besan) - 400 gms
2. salt - (to taste)
3. turmeric powder - 1 tea spoon
4. red chilly powder - 2 tea spoons
5. dry-fenugreek (crushed) (kasoori methi) - 1/2 tea spoon
6. cottage cheese (paneer) - 50 gms
7. dried (crushed) mint leaves - 1/4 tea spoon
8. cumin seeds - 1 tea spoon
9. coriander powder - 2 tea spoons
10. seasoning (garam masala) - 1/4 tea spoon
11. garlic - 8 cloves
12. ginger - 1/2 inch
13. onion - 2 medium bulblets
14. cooking oil - 2 table spoons
15. curd - 3 table spoons
16. tomato - 2 medium size
17. water
Procedure:
To prepare Gatta dough:
1. take 400 gms bengal gram flour (besan) in a bowl & add to it-
b. a pinch of salt
c. 1/4 tea spoon turmeric powder
d. 1 tea spoon red chilly powder
e. 1/2 tea spoon crushed dry-fenugreek (kasoori methi)
f. 1 tea spoon extra-virgin olive oil or cooking oil
2. mix all the ingredients
3. add very small quantity of water to knead a hard dough
To prepare Gatta stuffing:
1. take 50 gms cottage cheese (paneer) & add to it-
a. a pinch of salt
b. 1/4 tea spoon dried mint leaves (crushed)
2. mash the ingredients properly so that there are no lumps in the stuffing
3. take a small share of the gatta dough
4. roll it with your hands
5. press it softly with your finger
6. fill the roll with gatta stuffing
To cook Gatta rolls:
1. heat some water in a deep pan (on high flame)
2. add a pinch of salt
3. add 1 tea spoon cooking oil
4. place all the stuffed gatta rolls in the boiling water
5. let the rolls boil for approx. 5 minutes, so that they start floating
6. let them cool to room temperature
7. cut them into equal slices
To prepare Gatta gravy masala:
1. take a grinder jar, and put-
a. 1 tea spoon cumin seeds
b. 1/2 tea spoon turmeric powder
c. 1 tea spoon coriander powder
d. 1 tea spoon red chilly powder
e. 1/4 tea spoon seasoning (garam masala)
f. 8 garlic cloves (peeled)
g. 1/2 inch ginger
h. diced onion (1 medium bulblet)
2. grind all the ingredients
Main Preparation:
1. heat 1 table spoon cooking oil in a cooker
2. fry finely chopped onion (1 medium bulblet)
3. add the gatta gravy masala and stir it well for 2 minutes
4. add little water to it, and stir
5. add 3 table spoons curd, and immediately stir it until it dries
6. add chopped tomatoes (2 medium size)
7. add salt to taste, and cook
8. add all the stuffed gatta slices
9. mix the slices carefully with the gravy
10. add 2-3 medium bowls water (water in which gatta rolls were cooked)
11. cover the cooker, and let the dish cook until 1 whistle
12. uncover the cooker, and serve the dish
