Recipe to prepare "Karele ke Chhilke ki Sabzi":
Ingredients:
5-6 bitter gourds
1 tbsp refined oil
8-10 fenugreek seeds
1 tbsp fennel seeds
1 pinch asafoetida
1/2 tbsp coriander seeds, crushed
2 bulblets onion, finely sliced
salt to taste
1/4 tbsp turmeric powder
1/4 tbsp red chilli powder
1/2 tbsp dry mango powder
Method:
Take the bitter gourds, and scrape their skin in a plate.
Heat oil in a pan.
Add in fenugreek seeds and saute until color changes.
Add fennel seeds and asafoetida; saute well.
Add coriander seeds and saute.
Add onion and saute until transparent.
Add the skins of bitter gourds and mix well.
Add salt and stir well.
Cover the pan for around 2 minutes to let it cook.
Uncover and stir once.
Add turmeric powder and red chilli powder; mix well.
Cover again for 1 minute to cook further.
Uncover and stir on high flame until dry.
Add dry mango powder and stir again for a while.
Karele ke Chhilke ki Sabzi is ready to serve.
