Recipe to prepare "Mix Veg. Upma":
Ingredients:
1 tbsp refined oil
1/2 tsp mustard seeds
2 tbsp sliced onion
1 cup chopped french beans
1 cup chopped cabbage
1 cup grated carrot
2-3 tbsp finely chopped tomato
salt to taste
1 tbsp green chillies, chopped
1-1/2 tbsp curd/yoghurt
1/2 cup chopped capsicum
1/2 tsp red chilli powder
little cottage cheese/paneer, thin slices
250 gms semolina/suji/rawa
1/2 ltr water
1/2 cup chopped coriander leaves
Method:
Heat oil in a pan.
Add mustard seeds, and let splutter.
Add onion, and saute lightly.
Add french beans, and saute.
Add cabbage, and saute it.
Add carrot, and saute well.
Add tomato, salt and green chillies; mix and saute well.
Add curd/yoghurt, and mix well.
Add capsicum, and mix again.
Add red chilli powder, and mix well.
Add cottage cheese slices, and mix again.
Add semolina; stir and saute for half a minute.
Add water, and stir for a while.
Add little salt; stir and cover the pan to cook on low flame for a minute.
Uncover, and stir again for a while on medium flame until thick.
Add coriander leaves, and mix again.
Put off the flame, and garnish with sliced tomato, onion, green chilli and coriander leaves.
Mix Veg. Upma is ready to serve.
