Recipe to prepare "Chicken Momos":
Ingredients:
1 bowl boneless chicken
1 tbsp refined oil
1/2 lemon juice
1 pinch salt
1 pinch blackpepper powder
1 tbsp refined flour/maida
1 large bowl refined flour/maida dough, (soft dough kneaded with lukewarm water, and covered with wet muslin cloth-piece for 15 minutes)
1 bowl mixture of refined flour/maida and water
Method:
For Stuffing:
Take chicken, and cut into small pieces.
Heat oil in a pan.
Add lemon juice to the chicken pieces in bowl; mix well and keep it aside till the oil heats.
Add to the oil, chicken pieces and salt.
Stir continuously until moisture in chicken dries out completely; toss once.
Add little lemon juice, and stir again to cook evenly.
Add blackpepper powder, and stir-cook again.
Add refined flour/maida, and stir vigorously on high flame, to dry out the remaining moisture in chicken.
Put off the flame, and keep it aside.
For Momos:
Take out small (lemon-size) portion of the dough. Make a ball by rolling in circular motion between your hands. Flatten with your hands, roll on the board with the help of rolling-pin, and cut all its edges.
Put 3-4 pieces of chicken stuffing on it at the centre, and apply mixture of refined flour/maida and water on the edges. Lift all the edges, and seal them to give a shape of small round sack.
Repeat the method to prepare rest of momos, and then steam them.
Chicken Momos are ready to serve with your favourite chutney.
