This delightful Tender Coconut & Cashew Curry combines the subtle sweetness of tender coconut with the creamy richness of cashews. The dish is aromatic and flavorful made with Malvani Masala Powder & Kokum Petals making it a perfect comforting meal. Tender coconut is hydrating and rich in essential electrolytes, while cashews provide healthy fats and protein. Together, they make a nutritious and satisfying dish.
If tender coconut is unavailable, you can use young green jackfruit for a similar texture and mild flavor.
Ingredients -
Tender Coconut Water - (as required)
½ cup - Cashew Nuts (soaked in hot water)
1 whole - Tender Coconut Flesh (cut into batons)
¼ - Dry Coconut
1 - Onion (sliced)
8-10 - Garlic Cloves (peeled)
1 tsp - Oil
2 - Green Chillies
1 tbsp - Coriander Leaves (with stem)
½ tsp - Ginger Paste
2 tsp - Oil
2 - Bay Leaves
¼ tsp - Turmeric Powder
1 tbsp - Malvani Masala Powder
2-3 - Kokum Petals
Salt - (as per taste)
1 tbsp - Coriander Leaves (chopped)

00:00Well today's recipe is one of those lost recipes from the coastlines of Maharashtra.
00:11Well very typically, this is that recipe from my hometown.
00:15This is Tender Coconut Curry. Let's begin.
00:18Well this has possibly one of those quintessential hot favourites that are used in Maharashtrian food.
00:32Coconut, Kokum, Malvani Masala.
00:35Well this is very typically coastal, very typically Malvani.
00:38Another very important ingredient with this that goes is the tender coconut.
00:42Let's jump in right away.
00:44Let's begin first things first, roasting a dry coconut.
00:48Let's literally burn this, of course not in its entirety.
00:51Just in a couple of parts and portions here and there.
00:54And this adds in that wonderful smokiness that's required in this curry.
01:01Let's transfer this on a cutting board and cut this roughly.
01:13Let's transfer this into a pan.
01:16Along with this, sliced Onions.
01:22Cloves of Garlic.
01:25And lastly, Vegetable Oil.
01:30Let's turn the flame on and allow this to turn golden brown in colour.
01:37Once this turns golden brown in colour, which is say 3-4 minutes of grilling or roasting on slow to medium flame.
01:43Let's turn the flame off and transfer this on a plate to cool down.
01:50Once this mixture cools down completely, we'll transfer this in a mixer jar.
01:55Let's break in a couple of Green Chillies as per the spice that you can take.
02:01Couple of stalks of Fresh Coriander with the stem of course because that's where the flavour lies.
02:07And along with this, just a touch of Ginger.
02:10Let's cover this and grind this into a fine and smooth paste.
02:14Our paste is done and ready, let's move on to the next step.
02:17Let's heat the same pan again and add in Vegetable Oil.
02:23Once the oil heats up, let's begin with roughly cut Red Onions.
02:30A couple of Bay Leaves.
02:32And stir this well.
02:33Once the Onions saute lightly, I'm going to add in the ground paste.
02:42Let's add in some spices.
02:44Beginning with Turmeric Powder.
02:48Followed by Malvani Masala.
02:50Well, if you do not have Malvani Masala at home, ensure you use Red Chilli Powder and Garam Masala.
02:56A couple of Petals of Gokum.
02:58And along with this, Salt.
03:01Let's stir this well and add in tender Coconut Water.
03:11Let's stir this well.
03:15And add in Cashew Nuts.
03:17Just soak Cashew Nuts in hot water and put that to use.
03:22A quick stir.
03:23And allow this to simmer on low flame.
03:26By that time, let's cut the tender Coconut into pieces.
03:30When I mean pieces, I mean thick batons like so.
03:36Well, this is just about perfect.
03:39Let's continue cutting like so.
03:41Let's transfer this into our curry, which is simmering beautifully.
03:48A quick stir.
03:49And continue simmering for 2-3 minutes on low flame.
03:54While this is happening, let's quickly chop some Coriander.
04:01Let's chop the Coriander.
04:05And let's chop the Ginger.
04:07And let's chop the Coriander.
04:13Let's sprinkle this on our curry.
04:16And with this, our tender Coconut Curry is done and ready.
04:21With this, off goes the flame.
04:23Now, let's quickly taste.
04:31This is pure heaven.
04:33You may ask, this goes with what?
04:36This goes perfectly well with something called Chapati.
04:40Well, we call it Chapati, the world calls it Chapati.
04:44But this goes perfectly well with Chapati.
04:47Little bit of Toop, which is Ghee.
04:49Or just a little bit of steaming hot rice.
