Boureki with chicken and puff pastry
Ingredients:
• A little olive oil for frying
• 500 g chicken breast
• 500 g zucchini (approximately 3 medium-sized zucchini)
• 500 g potatoes (approximately 3 medium-sized potatoes)
• 300 g mizithra
• 40 g olive oil
• 10 g coarse salt for boiling
• 5 g fine salt
• 2 g pepper
• 3 g fresh oregano
• 1 medium-sized clove of garlic
• A package with 2 sheets of puff pastry
• A little olive oil for the tray
For the topping
• A little milk
• Some sesame seeds
We cut the zucchini into medium-sized slices.
We cut the potatoes into medium-sized slices.
We cover the potatoes with water.
In a pot, we add water, the 10 g of coarse salt and the chicken breast to boil.
When the chicken breast is cooked, we take it out of the pot and let it cool.
In the pot with the chicken broth, we add the zucchini and the potatoes and let them boil until they soften.
When they are ready, we remove them with a slotted spoon.
We cut the chicken into thick pieces.
If we want, we add 2 extra g of pepper.
We place it in a pan with a little olive oil to brown.
We let all our ingredients cool completely.
We place one sheet of puff pastry on the counter with its plastic wrap and roll it out a little.
With a fork, we make a few holes.
We grease a tray with a diameter of 28 cm.
We place the sheet, remove any excess, and use those pieces to fill in the gaps.
In a bowl, we add the olive oil, the 5 g of fine salt, the pepper, the minced garlic, and the oregano. We mix well and add it to the bowl with the zucchini and potatoes, stirring gently to avoid breaking them. Then, we place them in the tray.
We add the pieces of the chicken breast and the mizithra.
We don’t roll out the second sheet. However, we pierce it with a fork.
We cover the tray and cut off any excess with a rolling pin.
We try to seal the edges.
We score the top sheet with a knife.
We put a little milk with a pastry brush, brush it on, and add the sesame seeds.
We bake it in a moderate oven for about 40 minutes for the puff pastry to cook.
When we take it out of the oven, we let it rest for 30 minutes.
