SPANAKOPITA RECIPE

INGREDIENTS
6 sheets of filo pastry
80 g feta cheese
500 g spinach
80 g onion (finely chopped)
6 cloves (finely chopped)
30 ml oil
Salt and pepper to taste

PROCEDURE
Preheat the oven to 200 degrees Celsius.
Blanch the spinach by heating up a pot with boiling water.
Squeeze all the water out of the spinach and then finely chop the spinach.
Heat up a pan with some oil and start to cook the onions.
When translucent, add the garlic.
Once fragrant, add in the spinach and cook till all the water evaporates.
Transfer to a plate and let cool completely.
In a mixing bowl, combine the feta, ricotta, and lunacy mixture.
Season with salt and pepper.
Lay out one sheet of filo pastry on a flat surface.
Brush with butter and lay out another one on top.
Divide and cut them into even strips (8 cm wide).
Spoon out a tbsp of the cheese filling into a corner and fold it into triangles.
Brush with butter.
Bake in the oven for 10-15 minutes till light golden.
Enjoy with some tzatziki.
