00:00Not everyone knows this, but I lost 110 pounds
00:03about five years ago.
00:04Recipes like this that only take like five minutes to make
00:07are what keep me on track for my goals.
00:09We're gonna start with some olive oil,
00:10about a tablespoon of sherry vinegar,
00:12and plenty of cracked black pepper.
00:14It is cacio e pepe after all.
00:15So now that we have our dressing with the oil inside,
00:18we're going to add our kale into the dressing
00:20so we can massage it.
00:21It softens it, it takes out the bitter flavors.
00:24Now we're gonna shave in
00:24some nice fresh Pecorino Romano cheese.
00:27Oh yeah, this looks really good.
00:30It looks super fresh and vibrant.
00:31Looks like you would get it in a restaurant
00:32and it literally took me like two minutes to make.
00:35From rough, dry, bitter, to soft, moist, and delicious,
00:39this is what we're going for.
00:42It's tender, delicate, sweet, floral from the olive oil.
00:47The cheese is nutty, salty.
00:49This is my lunch.
